Healthy Pineapple Carrot Muffins🍍🥕
Soft, moist, and naturally sweetened, these carrot and pineapple muffins make the perfect snack or breakfast treat 🥕🍍🧁
INGREDIENTS
- 2 cups (150 g) grated carrots, from
- 400ml can crush pineapple, drained
- 2 large eggs
- ⅓ cup avocado oil , or neutral tasting oil
- ⅓ cup maple syrup or honey
- 2 teaspoons vanilla extract
- 2 cups white whole wheat flour.
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
INSTRUCTIONS
Step 1
Preheat oven to 180°C (350°F). Line a 12-hole muffin tin or grease lightly.
Step 2
In a large bowl, combine carrots, drained pineapple, eggs, oil, maple syrup, and vanilla.
Step 3
In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
Step 4
Add dry ingredients to wet ingredients and mix until just combined.
Step 5
Divide batter evenly among muffin cups.
Bake for 20–22 minutes, or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes before serving.
