Payton started Grade 1 today and I am sitting here with the biggest, fullest heart 💖 Watching her walk into that school this morning reminded me why I do what I do every single day.

I want to say thank you to every single person here. My clients, this community, the ones who like, comment, share, message me, support my work and trust me with their journeys. You have no idea how much that means to me. Because of you I get to provide for my daughter and send her to a school that feels safe, loving and right for her.

One of the biggest tips I can give you if you’re starting a health journey this year is this... keep it simple.

This lunch wasn’t planned.
I didn’t meal prep.
I didn’t follow a fancy recipe.

I opened the fridge, grabbed what I had, and made it work.
Cucumber, cheese, tomatoes, lettuce, chicken, egg, and a spoon of curry mayo. Done.

Most of my lunches look like this. Leftovers, bits and pieces, real food thrown together in five minutes. And that’s exactly why it works.

Consistency doesn’t come from perfection.
It comes from making the best choices you can with what’s available.

Something big is happening and it matters more than most people realise.

For decades we were told that fat was the enemy, carbs were the base of a healthy diet, and chronic disease was just bad luck or genetics. The official food pyramid taught us to build our meals on grains and starches and to fear saturated fat.

Now we are starting to see the official narrative shift.

The updated American dietary guidance and disease treatment frameworks are finally acknowledging what many of us have experienced first hand. Lower carbohydrate approaches are not only valid, they are being recommended for the management and treatment of metabolic disease, including type 2 diabetes, insulin resistance and obesity.

This is not fringe anymore.
This is not alternative anymore.
This is mainstream medicine slowly catching up to clinical outcomes.

When official literature starts changing, it usually means the evidence has become too strong to ignore.

So what does this mean for us in South Africa?

Our current South African Food Based Dietary Guidelines still emphasise a very traditional model. Starchy foods are encouraged as part of most meals. We are told to make them the foundation of the diet. Fat intake is still approached cautiously. Saturated fat is often grouped as something to limit. Whole grains, maize meal, bread, rice and cereals are still positioned as staples.

At the same time, South Africa is facing a metabolic health crisis.
Rates of obesity, type 2 diabetes and insulin resistance are climbing rapidly.
We are one of the countries hardest hit by lifestyle related disease.

There is a disconnect here.

On one hand, we have global evidence showing that reducing carbohydrate intake improves blood sugar control, lowers insulin levels, supports fat loss and can reverse markers of metabolic disease.
On the other hand, our national guidelines are still largely built on older assumptions that prioritise carbohydrates as dietary cornerstones.

This does not mean South African guidelines are malicious or useless.
It means they are slow to change.
Policy always lags behind science.

What is important is that individuals are allowed to choose dietary approaches that work for their bodies, especially when managing disease. Low carb and ketogenic diets are no longer experimental. They are well researched, clinically supported and life changing for many people.

We are watching the start of a global shift.
The US is beginning to formally acknowledge carbohydrate restriction as a therapeutic tool.
Other countries will follow.
South Africa will eventually follow too.

Until then, you are allowed to question.
You are allowed to do better than outdated advice.
You are allowed to prioritise metabolic health over food pyramids that no longer serve us.

Nutrition science evolves.
Guidelines should evolve too.

This is not about trends.
This is about health, evidence, and finally seeing the story change.

These keto loaded bell peppers are one of those meals that just works. High protein, proper fats, big flavour, and simple enough for a normal weeknight. If you like meals that feel filling and satisfying without the carbs making you feel like you need a nap after, this one’s for you.

Keto Loaded Bell Peppers 🫑

What you’ll need
• 4 large bell peppers
• 4 chicken breasts
• 1 tablespoon olive oil
• 1 teaspoon salt
• ½ teaspoon black pepper
• 2 teaspoons chicken seasoning
• Optional ½ teaspoon chilli flakes if you like heat
• 250ml fresh cream
• 1 cup grated cheddar cheese (Use ¾ cup for the sauce and ¼ cup for topping)

Method
1️⃣ Preheat your oven to 180°C.
2️⃣ Season the chicken breasts with salt, pepper, Usisi chicken seasoning and chilli flakes if using. Make sure they’re well coated on both sides.
3️⃣ Heat the olive oil in a large pan over medium heat. Fry the chicken for about 6 to 7 minutes per side until golden and cooked through. Remove from the pan and set aside to rest.
4️⃣ While the chicken cooks, prepare the peppers. Cut a neat circle around the top of each pepper, remove the tops and scoop out all the seeds. Place them upright in an ovenproof dish so they don’t tip over.
5️⃣ Dice the cooked chicken into small bite sized pieces.
6️⃣ In the same pan you cooked the chicken in, pour in the cream. Bring to a gentle simmer and let it cook for about 7 to 10 minutes until slightly reduced and thickened. Taste and adjust seasoning if needed.
7️⃣ Stir in ¾ cup of the grated cheddar and mix until melted and smooth. Add the chicken back into the pan and stir until everything is coated in that creamy cheesy sauce.
8️⃣ Spoon the chicken mixture evenly into the bell peppers. Top each one with the remaining cheddar cheese.
9️⃣ Bake for 15 to 20 minutes until the peppers are tender and the tops are golden and bubbly.

Serve hot and enjoy every bite. This one is proper comfort food.

Today was one of those full, slightly chaotic, deeply meaningful days.
Blood donation stop first at , because giving back matters ❤️
Then straight into school prep mode with Miss P. Shoes, bags, stationery, all the things.

Seeing everything laid out at the end made me pause for a moment. Not just because it’s a lot, but because it’s another year I get to show up for her, fully.

Shoutout to the other single parents doing this on their own. The planning, the carrying, the paying, the mental load, the quiet moments in between. It’s tough, but it’s also incredibly special.

My hair has always grown pretty slowly so seeing about 3cm of regrowth compared to the usual 1cm has been incredible. I’m also noticing so many new baby hairs popping up. I said I wouldn’t plug anything until I tried and tested it myself and now I have and I’m super impressed with the results. I’ll share the next update after another six weeks but I’m already super happy with the progress so far.
