Cauliflower Hash Browns? Yes, please!

Hey, I’m Kim, your keto BFF, and today we’re turning cauliflower into golden, cheesy little bites of crispy heaven 🧀✨

You’ll need:

1 small onion

1 medium cauliflower

1 egg

1 cup grated cheddar (more = extra crispy 😏)

Your fave seasoning (I’m loving Spice It Nice)

The magic:
1️⃣ Preheat oven to 180°C & line muffin tray with silicone cups.
2️⃣ Pulse onion + cauliflower in food processor until crumbly.
3️⃣ Mix in egg, cheese & seasonings, pulse again (but don’t overdo it!).
4️⃣ Spoon into muffin tray evenly & bake 25–30 mins.
5️⃣ Golden, crispy, keto-perfect bites are ready! 😍

💸 “Keto is too expensive” … I hear this all the time. But here’s the truth: when you cut out the takeaways, the chips, the chocolates, the bottles of cooldrink, you’ll be surprised at how much you actually save 🙌

When I first started keto, I couldn’t believe how much lower my food budget became. And so many of my clients, especially the carnivores, say the same thing. Because guess what? Eggs, mincemeat, chicken pieces, pilchards… all budget friendly, nutrient dense, and way more filling than those processed foods ever were.

Now yes, I love the fun keto products but those are treats, you do not need them to succeed. Keeping it simple not only works, it often gets you even better results. I could just have easily made that same recipe with spiralised zucchini for the pasta. Zucchini at my local Pnp is about R12 a pack currently. You could also substitute the parmesan for a white cheddar that would be more cost effective. Even without swopping the cheese this meal works out to approximately R107 using the zucchini and feeds my family of 4 so only R26,75 per serving.

If you’ve ever dealt with carpal tunnel syndrome, I’m so sorry, the pain really is unbearable 😖

I found out yesterday that I have acute carpal tunnel, and honestly… surgery is the last thing I want if I can avoid it. So here’s my plan to give my body the best chance to heal naturally:

* Extended fasting to reduce inflammation

* Spray for pain relief
