Greek veggie bowls π₯π₯π
Iβve been eating some variation of these for the last 3 weeks, theyβre super filling and nutritious! Itβs way cheaper to make each component yourself, but of course you could always go with a pre-marinated tofu, frozen potato wedges or ready-made tzatziki if youβre pressed for time β°
β¨ For 4 bowls:
500g firm tofu
2 x large potatoes
120g tzatziki
Marinade:
2 Tbsp olive oil oil + 2 x lemons juice 1 tsp dijon mustard + fresh herbs + ΒΌ cup water
Salad:
4 x tomatoes + 120g medium fat feta + chopped cucumber & red onion + red wine vinegar + pepper
