When a dietitian travels abroad! My favorite thing to do is to browse the local supermarkets and see what different fresh foods and products are on offer. My favorite find was the nut grinder where you can grind your own nut butter in store from fresh nuts!!🥜

Cheesy Oat and Zucchini Bread
INGREDIENTS
3 cups oat flour (Future Life Smart Oats)
2TBSP baking powder
1.5 cups plain yoghurt
1 cup grated cheddar cheese
3-4 grated baby zucchini
1 tsp salt
Sprinkle cayenne pepper or paprika

METHOD
1. Blend the oats in a food processor until it is a fine, smooth powder
2. Combine with the baking powder and then add the yoghurt
3. Blend well. Mixture will be sticky
4. Add the grated cheese and zucchini, add a dash of milk if it is too dry
5. Spread into a greased loaf pan, sprinkle oats on top
6. Bake for 50-60 minutes

*bread is quite dense but nice toasted. Serve with your favourite winter warmer soup.

Smart Chocolate Raspberry 'Brownie'

1/2 cup Future Life instant classic oats
1 banana
1 egg
Handful raspberries (or any berries)
1TBSP maple syrup
1/2 tsp baking powder
1TBSP cocoa powder
Pinch salt

Blend all the ingredients in a blender until combined. Spread in a greased baking tray/ramekins and bake at 180C for 20-25 minutes.

*I initially made this as a baked oats breakfast recipe until my 3 year old asked me if it was a chocolate brownie. Packed with the fibre and goodness from the oats, banana and berries of course I said yes it is 😄

This one is for the coffee lovers. Start your day with this delicious coffee peanut smoothie. Did you know that adding Oats to your smoothie provides a nice amount of fibre which changes the glycemic index of your smoothie and keeps you fuller for longer. Oats is high in beta-glucan, a soluble fibre, which can help lower cholesterol and promote a healthy gut microbiome.

Coffee Peanut Smoothie
1 Banana
1TBSP low sugar peanut butter
1/4 cup Future Life Classic Instant Oats
2 tsp instant coffee powder
1/2 cup fat free milk
1tsp chia seeds
1tsp honey/xylitol (optional)
Ice cubes
Cinnamon

Blend until combined and Enjoy!
