Boiled Egg Salad

2 boiled eggs
Red onion
30g feta
Cucumber
Cherry Tomatoes
1/2cup corn
Fresh basil
2tsp Pumpkin seeds
1 Heaped Tbsp low fat plain yoghurt

Lunch for the next few days.....

I often tell clients to have the same lunch for 2 or 3 days and when the ingredients are finished to choose a different lunch. It simplifies things and less goes to waste.

Swipe to see the ingredients i used. I cooked the sweet potato in the microwave then mixed all remaining ingredients together and added 2tsp lite Mayo + 2tsp low fat plain yoghurt, salt, pepper and Woolies 'Everything Bagel sprinkle'.

On these cooler days I never feel like eating a cold salad so decided to make a warm Mexican salad today (with a bit of a bite). I made an extra two for the next two days and stored them in my salad jars.

WARM MEXICAN SALAD

Chicken strips (4 per portion)
Ina paarman chicken spice
Butter lettuce
1/4 cup red kidney beans
1/4 cup sweet corn
Red onion
Cherry Tomatoes
Woolworths Mild Salsa (3 Tbsp)
jalapeรฑos (these have a bite so don't add too many)
Fresh lemon
Salt and pepper

Coat the chicken in Ina Paarman chicken spice and cook in the air- fryer for 10mins. When chicken is cooked, cut it up and mix it with all the ingredients except the lettuce. Heat in microwave for a minute. Place on top of the lettuce. Squeeze fresh lemon over it and salt and pepper. Enjoy!
You can have as much lettuce, tomato and onion as you like.

If you find you battle to digest bread and tend to feel bloated, uncomfortable, sore, constipated or have reflux after eating it try having sourdough instead. Alot of clients find it easier to digest.

How do you make pasta dishes more healthy?
Add WAY more chicken fillets and vegetables than pasta. This is one of my family's firm favorites but because I add cream we probably only have it once every 2-3 weeks.

Ingredients (serves 4)

5 cloves garlic - crushed
1 large onion- chopped
6 chicken fillets-chopped into bite size pieces
Broccoli-1 extra large head /or 2 small heads
4 carrots- chopped
Cream- 300ml
Salt and black pepper to taste
Penne Pasta- 300g raw

Fry the garlic and onion in a little boiling water.
Add the chicken, carrots, salt and black pepper. Cover and simmer until the chicken is cooked. Cook the pasta.
When the pasta is almost cooked add the broccoli and cream to the chicken. Place the cooked pasta in a serving dish and when the broccoli is bright green pour the chicken and veg over the pasta and mix together.

Living a healthy lifestyle requires EFFORT.ย  And when you consistently put the effort in, that's when the magic happens. Transformations like this don't happen overnight. Rather spend your money on a healthy diet/lifestyle NOW than on doctors bills and multiple medications LATER.
Once you've retired, you don't want to have to spend half your pension on medications every month.

Chicken and Veg Coconut Curry/Stir-fry

Ingredients

2tsp olive oil
1 onion chopped
2 heaped tsp garlic and ginger mix
2 tsp curry powder
4 Chicken breasts chopped
2 large carrots
2 baby marrow and 3 patty pans
Chopped cabbage (half a packet)
1 can LITE coconut milk
2 Tbsp lemon juice
1tsp sugar- heaped
1tsp salt- flat

1) Fry the onions, garlic&ginger and curry powder
2) Add the chicken and carrots
3) Once cooked add the rest of the veg, coconut milk, lemon juice, salt and sugar. Simmer until veg are cooked.
4) Serve with rice.

I've really enjoyed working with Vish and helping him with his weight loss journey. One of the reasons why he's been so successful is because every one of his family members decided to get behind him and support him. His wife and children have been incredible in helping to prepare healthy meals and joining him with his exercise routine. It's been a pleasure to watch his progress. Well done Vish (AND FAMILY) you guys are amazing!! Keep going ๐Ÿ‘Š๐Ÿ‘๐Ÿ’ช

Another awesome inter-prov tournament! Thank you Midlands Squash Union for hosting such a great SA Masters IPT.
We had some really tough matches with rallies that went on for days playing in 38 degrees!
