So you think you've failed. Put on a few kilos. Ate that slice of cake when you promised yourself you wouldn't. Face it : you're a big , fat failure !
Just wait one cotton pickin' minute there, sweet pea. How is it failure to face up to a weight problem and make the decision to start dealing with it ? How is it a failure to lose 35 kilos and then - for whatever reason - put back 3, or 5 ? How is it a failure to decide that you will make it a goal to move more every single day, and stick to that ? How is it a failure to radically and totally overhaul your entire lifestyle in order to feed yourself good, wholesome, real and appropriate human food ? How is it a failure to face what you have done over an entire lifetime and change it all ?
Failure ? No. Human, that's what you are. Just human. Pick yourself up, dust yourself off and walk away from the crash site. You've learned what triggered you and why, now put down the cake and back away slowly. Let's move right on and resume the new healthy lifestyle you have designed for yourself. Now smile, and eat that steak !

What do you do when guests are expected and you want to impress with low carbohydrate meals which are not the run of the mill diet food ? You ask me for recipes of course !
Start by finding a pretty glass or china platter. Layer fresh, enticing green salad leaves onto it, scatter finely sliced onion rings, baby cherry tomatoes, olives and slices of creamy avocado. Crumble feta cheese across the top and place a jug of olive oil alongside for your guests to choose : dressed or naked ! Either serve this as a starter or with the main course - your choice.
Then we move to the main course. My version of Chicken Parmesan. Allow one and a half chicken fillets per person and slice into bite sized chunks. Spray your pan lightly with a non stick spray and melt a tablespoon of coconut oil before adding garlic and chopped onion to taste. Add the chicken a small amount at a time. Fry until browned and almost cooked through before turning heat down. Add approximately 350ml. sour cream and one small packet ( 40g.) Parmesan cheese. Stir through chicken. Add more cream if too dry. Sprinkle with black pepper and fresh chopped parsley and serve with extra cheese scattered across the chicken. Can be served on a bed of finely sliced and sauteed broccoli or finely chopped and lightly boiled fresh green beans. Lovely sharp colour contrast !
Now for the pudding.......
500ml. sour cream placed in a wide dish. Sprinkle evenly across the surface 30g. gelatine. Allow the gelatine to 'bloom' - could take 30 minutes. Once thickened place 250ml. water in a large microwave dish and bring to a boil. Add 50ml. lemon juice to the water and then add thickened cream, stirring very well to ensure all gelatine dissolves. Place in serving dish or individual ramekins for 2 hours until set. Serve with a dollop of fresh cream and three or four berries on top - raspberries, blackberries or blueberries are your best choices. And a sprig of fresh mint for a burst of colour and flavour ! Et voila : one keto friendly cheesecake pudding !
Now sit back and enjoy the compliments and the amazement : you mean this is diet food ? You'd better believe it sweet pea !
