Learning about the condition of Food Intolerance during my training as a Brain Dynamics Consultant, I realized that there are more issues at hand than just gluten and casein (dairy). In the beginning we did not ha
ve much information about Soy and why it tends to be an allergen to a lot of people. Later on we learned that the protein structure that is relevant in food intolerance, is closely matched in three major food groups - Gluten, Casein and Gliadin. This includes the gluten containing grain groups, all types of milk protein and all legumes, beans pulses and nuts, excluding only a few. The health advantages for people with intolerance that have walked this full road are phenomenal. Symptoms that are more difficult to control like that of Autism, Thyroid Disorders, Concentration problems, Hormone Imbalances, a weakened immune system, Auto Immune disorders, etc. are controlled better and greater harmony is achieved in the body chemicals and higher functions. If the diet is perfectly maintained these problems can be totally eliminated. Finding a product on the shelf that is free of all those substances is not easy. On top of this it is advisable for people with digestive problems, to cut out yeast, artificial and chemical substances, as well as change their sugar habits. Many gluten free products are based on Soy or pulse flours mixed with rice, potato or chickpea flour. This placed a challenge before me and I decided to develop a range of food products that are safe for all people with food intolerances. We also use a completely unrefined, highly beneficial sugar (Jaggery) that is used in all the biscuits and also available from our product list to buy. Fructose is also a refined sugar, but it does not cause insulin spikes in the body as it is metabolised in a different way than sugar. We also sell the our flours individually, that means unmixed which includes Corn Flour, Tapioca Flour, White Rice Flour, Potato Flour, Sorghum meal fine and coarse. This makes it possible for people who wish to mix their own mixes and thus save a substantial amount of money or create their own tasty recipes.
