Kidney-Friendly Balanced Dinner: Grilled chicken with Quinoa & Steamed Veggies 🐟🍚🥦
A nutritious and well-balanced meal that’s light on the kidneys but full of flavour!
Ingredients:
✅ For the Chicken:
• 1 small chicken (about 100g)
• 1 tbsp olive oil
• 1 tsp lemon juice
• ½ tsp dried dill or parsley
• ¼ tsp black pepper
✅ For the Quinoa:
• ½ cup cooked quinoa
• ½ tsp olive oil
• ¼ tsp garlic powder
✅ For the Steamed Veggies:
• ½ cup zucchini slices
• ½ cup bell peppers, chopped
• ½ tsp olive oil
Instructions:
1️⃣ Grill the Chicken: Brush the chicken fillet with olive oil, lemon juice, dill, and black pepper. Grill for 3–4 minutes per side until fully cooked.
2️⃣ Prepare the Quinoa: Cook quinoa according to package instructions, then mix in olive oil and garlic powder for flavour.
3️⃣ Steam the Veggies: Lightly steam zucchini and bell peppers, then toss with a little olive oil.
4️⃣ Serve & Enjoy! Plate the Chicken alongside quinoa and veggies for a balanced, kidney-friendly dinner.
