CSN WEEKLY RECIPE:
This colorful, crispy, crunchy fruit salad will brighten your CSN Fruit Day day!
Ingredients
Dilute 1 sachet Stevia, or 1 tablet Suganon in a tablespoon of water
3 Tbsp water
1 tsp grated lemon zest
1 punnet of strawberries (about 250g)
3 cups cubed watermelon
1 punnet of blueberries (about 150g)
6 mint leaves
Combine the diluted Stevia/Suganon, water, and lemon zest in a small saucepan.
Heat the mixture over a medium-high heat until it comes to a boil. Remove the mixture from the heat and allow to cool as you prepare the rest of the ingredients.
Hull the strawberries.
Cut watermelon into cubes.
Chop mint leaves.
Combine strawberries, watermelon, blueberries, mint, and the cooled diluted Stevia/Suganon mixture.
Toss salad gently until evenly mixed
Serve immediately
