🥑🍋🟩 ‘Mexican’ Bowl: Black Beans, Roasted Sweet Potato Cubes (olive oil, salt, smoked paprika), Dry Pan Roasted Sweet Corn, Lettuce, Tomatoes, Spring Onion, Avo, Cilantro
Maple Lime Dressing (fresh lime juice, real maple syrup, salt, cumin powder, cinnamon powder, paprika, nutmeg)
Dried black beans were soaked, cooked and frozen in ‘can’ size bags.

Chickpea Pancakes filled with Mixed Asian Greens & Mature Cheddar and Avo.
Pancake Recipe:
1 cup Chickpea Flour
1 1/4 cup Cold Water
2 Tbsp Olive Oil
1/4 tsp Pink Salt
Mix everything together with a whisk and leave for 1 hour to soak.

2Vegetable & Green Lentil Soup (leeks, celery, green sweet pepper, carrot, parsley, Nature’s Choice Vegetable Stock Powder, tomato paste)
Served with Rye Sourdough Toast.
I make a big pot of Vegetable Stock and freeze it in 1 liter containers.

Favourite Delicious (and easy) Creamy Tofu Mushroom Pasta- I made the sauce with finely chopped onion, garlic, sliced mushrooms (sauteed in olive oil), then added pureed firm silken tofu (with water), grated parmesan and truffle seasoning & salt. Dr Gerrie Lindeque obtained his MD degree from the University of Pretoria, South Africa and also holds a diploma in anaesthetics from the College of Medicine, South Africa. He has certification in emergency medicine and served on the board of the Association for Restorative Medicine. He spent five years in a rural practice in Canada during which time he gradually started incorporating nutritional modalities into his practice. For the past 20 years his focus has been on integrative medicine. His desire to understand the root causes of a disease leads him to study the work of other doctors and researchers and he regularly attends international conferences. He is a popular guest speaker at conferences in the United States. He has a great understanding of the biochemical processes and detoxification systems of the human body. His passion is to fulfil a God-given calling by helping people live long and healthy lives through lifestyle changes.

Annemarie Lindeque-Smit obtained her B.Optom degree from the University of Johannesburg. She opened a private practice, Provision Optometrists, in 2004. Her focus in practice is holistic: The eye is a window to your health and with every eye examination, she not only strives for excellent and appropriate vision correction, but also focuses on the health of the eye and how it relates to rest of the body. Ocular coherence tomography is included with every eye examination. This is a safe way to scan the eye 3 dimensional. Annemarie also specialises in the fitting of advanced rigid, scleral and ortho-K contact lenses and her practice is equipped to fit personalised progressive lenses.
