We’ve been speaking a lot about hygiene lately - and here’s a reminder why it matters. While recalls are often the most visible consequence of food safety failures, they’re not the only one. Regulatory action, financial penalties, and reputational damage are very real risks when hygiene and control measures fall short. Read more here:

The National Consumer Commission has taken action against a hummus supplier after Listeria contamination was discovered in its products, potentially leading to a R1 million fine and raising serious concerns about food safety

How confident are you in the hygiene standards of your facility? 💭

Most food businesses rely on checklists and daily records to monitor hygiene, but paperwork alone doesn’t always reveal what’s really happening on the floor. Hidden contamination risks and gaps in staff hygiene practices can quietly build over time, only becoming visible when an inspection, complaint, or food safety incident occurs.

That’s where a Hygiene Audit can make the difference.

Entecom’s Hygiene Audit programme provides a comprehensive, risk-based assessment of your facility, including:

• Inspection of the food preparation environment
• Review of hygiene and temperature monitoring records
• Traceability and documentation checks
• Food, hand, and surface swabs to detect pathogens such as Listeria, Salmonella, and E. coli

Our consultants conduct a combination of scheduled and unannounced audits, giving you a clear, objective view of your hygiene standards - and the confidence that your controls are working. 📩 Contact us to learn more.

Having procedures in place is important, but do they actually work under real conditions?

This month, we encourage you to take a closer look at your operational programmes:

• Does your cleaning procedure truly work within the turnaround time before production resumes?
• Are environmental swab points still relevant after equipment or layout changes?
• Are staff following procedures exactly as written?

Remember, verification means stepping onto the factory floor and confirming that the system performs as expected, not just on paper.

As we move into Quarter 2, the focus shifts from planning to proof on the factory floor! This quarter is all about verifying that your food safety controls work under real operating conditions.

Q2 Focus Areas:
• April: PRP/oPRP verification and environmental monitoring
• May: Full traceability recall drill
• June: Corrective action effectiveness and food safety culture review

These checkpoints help ensure that systems aren’t just documented, they are working where it matters most: in daily operations.
