Even though my kids don't have disabilities. Over the past year I have had a few clients in studio who talked to me about their struggles dealing with Public stares at their children with disabilities. So much so that they don't feel comfortable going to the local restaurant for lunch anymore. Perhaps these badges are ways to spread awareness and some consideration? Do you know someone who might be interested?

Ingredients:
​500ml Heavy Cream
​1 tbsp Plain Yogurt
​The Steps:
​Inoculate: Stir yogurt into the cream. Leave on the counter for 8-12 hours until slightly thickened.
​Chill: Put it in the fridge overnight. (Fat droplets must be ice-cold to bond!).
​Whip: Beat on high. It goes from whipped cream, to yellow chunks, to a sudden split!
​The Rescue: If it turns to "soup," don't panic. Pop the bowl in the freezer for an hour to harden the fat.
​Separate: Scoop the solid butter off the top. Save the liquid—that’s true buttermilk!
​The Wash: Knead the butter in ice-cold water 3 times until the water runs clear. (Don't skip this or it spoils!).

when half a bottle of milk went past the expiry date, and started going sour, I looked up what I can do with it. Turns out, it is perfect to make ricotta and it was so easy!

Quick Ricotta Guide (for 1 Liter)

​Heat: Pour the milk into a pot. Heat it slowly until it is almost boiling (look for those tiny "shimmering" bubbles around the edges, or use your thermometer—you're looking for about 85°C to 90°C).

​Acid: Turn the heat to low and add 2 tablespoons of your bottled lemon juice. Stir it once very gently and then stop.

​Wait: Let it sit undisturbed for about 5–10 minutes. You’ll see the white curds separate from the watery, yellowish whey.

​Strain: Line a sieve with a clean, thin kitchen towel or a piece of muslin. Pour the mixture in and let it drain for 15–30 minutes.
