ROMERIGE SPINASIESOP

125 g botter
2 knoffelhuisies, fyngemaak
75 g uie, gekap
10 ml droë basiliekruid
5 ml peper
5 ml sout
300 g spinasie
1 liter hoender aftreksel
125 ml room
35 g parmesaan, gerasper

Smelt die botter in 'n groot kastrol oor medium hitte. Voeg die knoffel en uie by en braai tot sag. Roer die basielie, peper, sout, spinasie en hoender aftreksel by en verhit tot kookpunt. Kook vir 5 minute tot die spinasie gaar is. Roer die room en parmesaan in en verhit stadig - moenie dat die sop weer kook nie. Maak die sop fyn met 'n handmenger indien verkies. Bedien warm.

Low Carb Ham Egg Cups Recipe from Metabolic Cookbook: http://tiny.cc/FatBurningRecipes

INGREDIENTS

12 eggs
12 thin slices of deli ham (round)
1/2 cup of your favorite cheese (I used parmesan)
1/2 cup diced scallions
Fresh cracked Sea Salt and Pepper

DIRECTIONS

Preheat the oven to 400 degrees. Spray a muffin tin with cooking spray. Lay a piece of ham in each hole creating a little ham cup. Crack one egg into each hole and sprinkle with salt and pepper.
Bake the eggs for about 12 minutes . . . until the white is firm and the yolk is still nice and runny.
Carefully remove each egg from the muffin tin and top with grated cheese and scallions. Serve hot!
