A Little Comfort for Your Festive Feasting ✨

As the season of gathering and joyful feasting begins, we wanted to share an ingredient that brings both wonderful flavour and gentle comfort: Fennel.

With its distinctive, gentle liquorice note, fennel is a natural friend during the holidays. It is rich in soothing nutrients and is especially helpful in easing post-meal gastrointestinal issues, such as bloating and heartburn. It’s a quiet hero for your stomach!

For a light starter, you can find lovely inspiration for a warming Roasted Patty Pan & Fennel Soup online. But we especially love preparing this simple, flavorful side dish for your festive table:

Our Festive Side Dish: Crumbed & Braised Fennel
Yield: Serves 4–6

Ingredients:
- 3–4 medium fennel bulbs (quartered)
- 1 tbl honey
- 100g breadcrumbs
- 1 tsp minced garlic
- Finely chopped rosemary
- Olive oil, salt, and pepper

Method:
1. Prep: Quarter the fennel bulbs. Drizzle with oil, honey, salt, and pepper on a baking tray.
2. Crumble: In a small bowl, combine the breadcrumbs, minced garlic, and chopped rosemary. Scatter this mixture over the fennel and toss to coat.
3. Roast: Roast at 180°C for 20-25 minutes until the fennel is tender and the crumbs are golden and crisp.

Surrounded by vineyards and spectacular mountains it has gorgeous views and absolutely no traffic noise whatsoever. It is a haven where even the busiest minds can find peace. For almost 50 years The Hydro has promoted relaxation and vegetarian cuisine as the pillars of good health and longevity. Today, most of our food comes from our own organic garden and our list of therapies is more extensive than ever. Mindfulness is encouraged so some guests will use their stay as a retreat. However, The Hydro is also a home-from-home where many guests reconnect with old friends. In many cases it’s where they originally met.
