Curious faces, open fields, and happy cows at Fairfield Dairy 🐄 🌿
This little lady couldn’t resist coming over to say hello! Just some of our grass-fed girls enjoying wide-open pastures, fresh air, and sunshine.
Moments like these remind us that great dairy starts with healthy, content cows and a whole lot of care.

Cheese Cake, a classic favourite that pairs well with any meal!

What you'll need ~
150g Tennis biscuits, finely crushed
80g butter, melted
For the filling:
500g cream cheese, at room temperature
250g mascarpone
3 free-range eggs
130g caster sugar
1 teaspoon vanilla extract
1 lemon, zest only
2 Tablespoons cornflour

Let's get baking ~
Line a cake tin with baking paper. Make sure the baking paper is 2cm higher than the pan. Place the pan on a baking sheet for easy handling. Mix the biscuit crumbs and butter and lightly press into the bottom of the pan.
Preheat the oven to 200°C. To make the filling, break up the cream cheese into smaller pieces using a fork. This will help reduce lumps later on. Add the mascarpone and eggs and beat until smooth.
Gradually add the sugar, beating well after each addition. Add the vanilla and the lemon zest and mix through. Sift in the cornflour while beating. Spoon the mixture on top of the biscuit crust and lightly tap the pan on the counter to even out the mixture.
Bake for 10 minutes. Reduce the heat to 160°C and bake for a further 20 minutes. Switch off the oven and leave to cool in the oven. Remove from the oven and slice once completely cool.

A classic for every crowd! Chocolate brownies.

What you'll need ~
250g butter, melted and cooled
2 Tablespoons vegetable oil
250g sugar
200g light brown sugar
4 eggs
1 teaspoon vanilla paste
160g flour
1 teaspoon salt
60ml full cream milk
100g good-quality cocoa
200g dark chocolate, chopped

Let's get baking ~
Preheat the oven to 180°C and lightly grease a 24 x 34 x 5 cm baking tin and line with baking paper.
Combine the melted butter, oil and sugar in a mixing bowl. Whisk well to combine. Add the eggs, milk and vanilla, then beat until light and fluffy. Sift the flour, salt and cocoa powder and fold into the wet ingredients until just combined. Fold in ¾ of the chocolate.
Pour the batter into prepared pan, smoothing the top with a spatula, and top with the remaining chocolate. Bake for 25–30 minutes, or until slightly fudgy but set. Allow to cool in the tin for 15 minutes before slicing into squares.

Chocolate Hot Milk Cake 🍫

What you'll need ~
2 cup milk
250g butter
2 teaspoons vanilla extract
8 free-range eggs
350g caster sugar
480g flour
8 Tablespoons cocoa
4 teaspoons baking powder
For the topping:
125g butter
1 x 250 g full-fat cream cheese tube
250g icing sugar, sifted
2 Tablespoons cocoa

Let's get baking ~
Preheat the oven to 180°C. Line the inside of a beer-box with greaseproof paper. Cover the bottom and sides with a layer of foil.
Gently heat the milk and butter in a saucepan until the butter melts, but do not allow to boil or you will lose moisture. Stir in the vanilla.
Beat the eggs and sugar until light and creamy. Sift the flour, cocoa and baking powder into a bowl. Gently fold the flour into the egg mixture.
Stir in the milk and butter until incorporated. Pour the batter into the prepared box and bake for 20 minutes. Cool and spread with the topping. Cut into squares to serve.
To make the topping, place the butter in a small saucepan and gently melt – the milk solids will gradually turn golden brown, which gives the butter a caramel flavour.
Pour into a glass bowl and chill for 15 minutes, or until set. Spoon into the bowl of a stand mixer, add the remaining ingredients and beat until creamy
