I love adding toasted seeds to my vegetables or salads. It takes only a couple of minutes in a pan. No oil needed. And it adds flavour, crunch and fibre. A nutrient boost that elevates an ordinary meal!

In a steamer???? Fortunately, it was a steamer situation. I left the stove on and left the house... for almost 2 hours! I am grateful that this was the only damage.

As a side, I love my new steamer that sits on a pot on the stove. Needs some serious elbow grease now 😫

Marmalade Playdough! Today, I popped into the shop to buy frozen fish and chips for dinner. After comparing the price and the ingredients of the chips, I ended up leaving the shop with 2kg of potatoes instead. There were a few benefits to this decision.

* I saved money. R 39.99 FOR 2KG of potatoes vs R65 for 1 kg chips
* My potatoes are not coated in palm oil
* I can keep the skins on for fibre
* I can use the remaining potatoes differently
* Less plastic for the volume of potato

And, it didn't take that long to cut the potatoes because I didn't peel them

Two thoughts to ponder...
1. Skipping breakfast makes it less likely that you will meet your nutrient requirements... especially for fibre!
2. No one said you have to eat cereal or porridge for breakfast

This open toastie on wholegrain or sourdough bread is a nutrient dense snack or breakfast option. Add scrambled egg if you need to up the protein.

This makes my heart truly sad. Growing up in the 90's meant that James van Der Beek had a place in the heart of our home...

This makes my heart truly sad. Growing up in the 90's meant that James van Der Beek had a place in the heart of our home. I have fond memories of watching Dawson's Creek with my mom and sister. We looked forward to every episode.... just one per week!

I have to share his message of awareness. Listen to warning signs from your body and get tested early. If caught early, colorectal cancer can be successfully treated. Don't ignore persistent bowel changes, extreme fatigue, blood in stools or unintentional weight loss. After the age of 45 years, screening for colrectal cancer or precancerous polyps should become part of your health checks.

Rest in Peace dear James/Dawson. Thank you for sharing your gift of acting.

Pasta can be enjoyed as part of a nutrient dense diet. Choose 100% durum wheat or whole varieties and manage your portion by adding the other components of a nutrient dense meal... lean protein + colour.

This is an easy meal, thrown together with minimal effort using leftover chicken. A great meal for this hot weather we are having!

My daughter and I have seen this in a few kids recipe books. But when we tried it, the toast burned while we waited for the egg to cook. And the egg ran out if we toasted the bread first. So this is our method...

Step 1: Using a cookie cutter, cut a shape out of the bread
Step 2: Spray the pan with a light spray of oil or spread one side of the bread with a low fat spread
Step 3: lightly toast one side of the bread - this will be the top
Step 4: Flip the bread and carefully add the egg. My daughter is practicing her egg cracking, so she cracks the egg into a bowl. It makes this step easier
Step 5: The adjustment to the recipe!

Once the bread is toasted (the egg will be mostly cooked), remove it from the pan and place it on a plate. Heat it in the microwave to continue cooking the egg. The egg white must be completely opaque.

Citrus Roast Chicken has been on the menu in our home most weeks since we bought our air fryer 3 years ago . If someone had told me before then that a roast chicken would be one of my easy go-to meals, I would have laughed.

But it really is! First, it requires minimal hands on time, and the sides can literally be changed up with the seasons. Second ... for our family, leftovers are given.

The air fryer is the true chef, and my favourite feature is that it switches off. No burned dinners due to distractions!

I use lemons/naartjies to stuff the chicken- after squeezing some juice over it. Or onion when citrus is not in season. The best trick I learned is to turn the chicken over mid way through cooking. This stops the breast meat from drying out.

So, I set the timer for 30 minutes, flip it, and reset the timer for a second time. I always try prep the sides during just one of these cooking sessions.

Today, I watched my kids ride bikes for 30 minutes while I drank hot coffee and sat in a welcome cool breeze. Sometimes, I get them bathed in that time. It is wonderful and it is usually a winner dinner ... meaning it actually gets eaten!

Note: I don't garnish my dinners. The photo just looked weird without it!
