KATAPA-GROUNDNUTS COMBO (VISASHI)

Did you know that a mix of katapa (cassava leaves) in powdered groundnuts makes a perfect 😌 food synergy, providing enhanced nutrient dense meal when taken with the Zambia staple food "nshima".

Well, cassava leaves are very nutritious and rich in:

ONE POT MEAL: SAUSAGE-OKRA STEW

Okra is a classic πŸ‘Œ ingredient in stew making, by incorporating sausage and okra in one pot using a low heat cooking method that avoids charring the meat (cooking at high temperature), which can produce carcinogenic compounds.

Nutritional Composition of Sausage:

➑️ Proteins: Sausage is a good source of protein which is essential for building and repairing tissues.βœ…οΈ

➑️ Fats: Fat is the major content of most sausage particularly saturated fat, added for maintaining moist and flavor.🚫

Vitamins & Minerals: B12, heme iron, zinc and sodium.
NOTE: Sodium is a key ingredient sausage making for flavor and preservation hence sausage is notoriously high sodium.

➑️ Sodium Nitrate/Nitrite: Added as preservatives to prevent growth of harmful bacteria. These compounds can form carcinogens when cooked at high temperature leading to cancer.🚫

Let's cook a home prepared meal below using locally sourced food that is budget friendly, nutritious and healthy.

1. Soya chunks: higher protein content per serving compared to meat, eggs, milk. Rich in insoluble fibre. Zero cholesterol and transfats. Safe levels of saturated fats, MUFAs and PUFAs. Refer to the Nutrition Information Chart on the Packaging Material.

2. Egg plants: Rich in Vitamin C, B6, B9, K; Minerals: Potassium, Magnesium, Copper, Manganese and Iron; Rich in Phytochemicals that act as antioxidants - preventing cancer, blood clots, high BP. Also rich in insoluble fibre for a healthy gut (preventing constipation & cancer of the colon, re**um).

NB: Tomatoes, red onion, egg plant and green pepper. Each colour signifies specific nutrients and phytochemicals. That's why we always say, eat different coloured fruits and vegetables.

Happy First Anniversary CHAUFoSNA πŸŽ‰πŸŽ‰πŸŽ‰πŸŽ‰πŸŽ‰πŸŽ‰

CHAUFoSNA has clocked one year since the launch on 5th July, 2024. The event was graced by the District Commissioner of Chongwe. We also had representatives from Global Network Solutions, National Food and Nutrition Commission, Nutrition Association of Zambia and ZANIS. More important to note, CHAUFoSNA was launched jointly with CHAU WASHA to appreciate the importance of integrating Water, Sanitation and Hygiene Practices in the Nutrition Agenda.

Meet the Chairperson of Industrial Affairs in CHAUFoSNA - Comrade Humble Godfrey Nyishi

You may wish to know that Cde Nyishi is the first Chairperson of Industrial Affairs, and has demonstrated exceptional leadership to grow the Ministry to its current state. Of course through collaboration with other partners & stakeholders.

Several projects & partnerships have been championed by his office such as Clinical nutrition pre-attachments, international collaborations with Kenya Nutrition and Dietetics Student Association & partnership with Lead implementation partners of the Urban Futures Project - (Global Network Solutions & CUTS International). We may also wish to know that Cde Nyishi is the Project Lead for the incoming Nutrition Innovation Exhibition. An annual event for promoting innovations, networking and empowerment of CHAUFoSNA compatriots. From drafting the concept note to mapping relevant categories, and coordinating the planning and implementation of the project with cooperating partners.

Highlights of Today's Meeting with Agriconnect

It was a momentous day of advancing bilateral relations with representatives from Agriconnect concerning the forthcoming Nutrition Innovation Exhibition. We are grateful to Agriconnect for supporting the noble cause by taking the role of stakeholder engagement, awarding incentives to winners and pooling funds for the event.

Highlights of the Presidential Address during the hybrid Executive meeting with Global Network Solutions (GNS). CHAUFoSNA has partnered with GNS to collectively plan & implement the Nutrition Innovation Exhibition. A novel event in the Office of the Chairperson of Industrial Affairs - CHAUFoSNA. This event is envisioned to draw the participation of stakeholders from different sectors of the food system.

Through this noble initiative, we are optimistic that CHAUFoSNA shall strengthen bilateral relations with vast associations, NGOs and Companies who are key stakeholders in nutrition. At the same time, the event is an opportunity for CHAUFoSNA compatriots and cooperating partners to develop and showcase homegrown solutions to Zambia's Food & Nutrition challenges as part of food system transformation. Not forgetting networking opportunities, job placements and career opportunities for CHAUFoSNA and cooperating partners.

Health Guideline for Water Intake

The recommended amount of water per day for different population subgroups:

#1. Infants
0-6 months: No water needed (exclusive breastfeeding/formula provides sufficient hydration)
6-12 months: 120-240 mL/day (in addition to breastmilk/formula)

#2. Children
1-3 years: ~1,000 mL (including fluids + food moisture)
4-8 years:~1,200 mL
9-13 years: Boys: ~1,600 mL Girls: ~1,400ml

#3. Adolescents (14-18 years)
Boys: ~2,600 mL; Girls: ~1,900 mL

#4. Adults (19+ years)
Men: ~3,000 mL (total water from fluids + food) Women: ~2,200 mL

Pregnancy: +300 mL/day;
Breastfeeding: +500-700 mL/day;
Physical activity: +250-350 mL per 30 mins of exercise

#5.Older Adults (65+ years)
Men: 2,000-2,500 mL; Women: 1,500-2,000 mL

Notes about Water intake:
1. Total water includes both fluids (~80%) and food moisture (~20%). Therefore, aim to drink 80% of your recommended daily water intake and the 20% shall come from food. For example, if your recommended daily water intake is 3000ml, 80% of 3000ml is 2,400ml. So u may round it off to 2,500ml (2.5L), and this can be your drinking target of water. Then 500ml to come from food to make 3000ml.
2. Beverages like Tea, Coffee and Sodas are part of the 80%. So instead of sodas, choose water. It's more healthy compared to sodas loaded with sugar and chemicals.
3. Climate adjustments: In hot/humid environments, add 500-1,000 ml depending on severity.
4. Physical activity: +250-350 mL per 30 mins of exercise
5. Health conditions: Kidney/heart patients may need restricted fluid intake. (Consult a Doctor or Clinical Dietitian)
