Banana and Carrot Cupcakes (9 cupcakes approximately 120 kcal each)

Ingredients
166 g ripe banana, mashed
120 g carrot, finely grated
2 eggs
40 g sugar
20 g oil (sunflower or vegetable)
140 g all-purpose flour
8 g baking powder (2 tsp)
2 g salt (½ tsp)
4 g cinnamon
5 g vanilla extract
Optional but very nice:
20 g raisins or lemon zest
Method
Preheat oven: 180 °C.
Line a 9 cup muffin tray.
Mash the banana until smooth.
Whisk in eggs, sugar, oil, and vanilla.
Stir in the grated carrot.
In another bowl mix flour, baking powder, salt, and cinnamon.
Fold dry ingredients into the wet mixture until just combined
Divide batter evenly into 9 cupcake liners (about ¾ full).
Bake 18–22 minutes until a toothpick comes out clean.
