Meatballs for the weekend, cook once - eat 3 times.
Ingredients:
- Meatballs
- 500g ground beef
- 250g ground pork
- 1 cup fresh breadcrumbs
- 1/2 cup grated or dry Parmesan cheese
- 1/2 cup cottage cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten
- Salt and pepper to taste
- Sauce
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (400g) crushed tomatoes
- 1 teaspoon dried oregano
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 tbs brown sugar
- Salt and pepper to taste
- 1 cup red wine - to de glaze the pan (optional)
- 3 cups fresh English spinach
- 1 punnet cherry tomatoes
Meatballs
Mix all ingredients together and form balls (large for serve alone or small for serving with pasta). Photographed are large meatballs.
Add olive oil to pan and heat, add meatballs, and cook on medium heat.
Remove and set aside.
Do not wash the pan. This is the flavour for the sauce.
Sauce
Add the onions and garlic to the meatball pan and saute until the onion is translucent.
Add the wine and stir, lifting the ingredients from the bottom of the pan.
Add the canned tomatoes and cherry tomatoes
Add the meatballs back to the pan and cover for 5 minutes.
Remove the lid and add spinach, then replace the lid u til spinach is limp.
Serve garnished with parsley
