I recently had the chance to attend a diabetes symposium, and it was such an eye-opening experience. I'm currently trying out the Dexacom One+, and I have to say, it's been pretty great so far. The device is super easy to wear and the phone interface is straightforward. I do wish I could scroll back through my readings, though. For anyone curious about carbs, pre-diabetic, or managing type 2 diabetes, this could be a helpful tool. It's affordable and means fewer finger pricks, which is a win in my book!

Check out a couple of the results, the last photo shows the spike created by a cup of tea with 1 sugar (9g carbs) compared to following curve post toast and scrambled eggs (21g carbs).

Meatballs for the weekend, cook once - eat 3 times.

Ingredients:
- Meatballs
- 500g ground beef
- 250g ground pork
- 1 cup fresh breadcrumbs
- 1/2 cup grated or dry Parmesan cheese
- 1/2 cup cottage cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten
- Salt and pepper to taste

- Sauce
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (400g) crushed tomatoes
- 1 teaspoon dried oregano
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 tbs brown sugar
- Salt and pepper to taste
- 1 cup red wine - to de glaze the pan (optional)
- 3 cups fresh English spinach
- 1 punnet cherry tomatoes

Meatballs
Mix all ingredients together and form balls (large for serve alone or small for serving with pasta). Photographed are large meatballs.

Add olive oil to pan and heat, add meatballs, and cook on medium heat.
Remove and set aside.
Do not wash the pan. This is the flavour for the sauce.

Sauce
Add the onions and garlic to the meatball pan and saute until the onion is translucent.
Add the wine and stir, lifting the ingredients from the bottom of the pan.
Add the canned tomatoes and cherry tomatoes
Add the meatballs back to the pan and cover for 5 minutes.
Remove the lid and add spinach, then replace the lid u til spinach is limp.

Serve garnished with parsley

Just enjoying the coals as they cool down after cooking the dinner. Camp fires are wistful and seem to enduce self reflection that paves the way for new beginnings. The smells, the crackle of the wood, the warmth of the heart that is the fire tunes into the inner child and leaves me joyful and thankful.

These baked omelettes don't look like much, but they sure do pack a flavour punch, and for those who are counting protein (12.5g per serve) and carbohydrate (2.4g per serve) it comes up trumps and weighing in at 115g or 1 cup of end product for those with a smaller pouch capacity than the average person.

Recipe makes 5 (pie tin size)

Ingredients:

5 large eggs25 cup cottage cheese25 cup cheddar cheese - grated25 cup fetta cheese crumbled25 cup milk
1 tsp Dijon mustard5 tsp iodised salt5 tsp cracked pepper
3 spring onions chopped
1 medium tomato diced

Method:
Preheat oven to 180C
Grease tins or muffin cases
In a large bowl, whisk the eggs and then gently stir through all other ingredients
Evenly divide mixture into tins
Bake in oven for approximately 20-25 minutes

Serve immediately while hot with toast or salad
Refrigerate and serve cold as a mid meal or sliced and served on crisp bread (salada)
May be frozen for up to 3 months
