Fajitas!! Always a winner🌯🇲🇽
My go to wraps are the flatbread ones you can find in the Coles bakery section. No nasties added!!! Highly recommend if you’re lazy like me and can’t be bothered making your own😉🤣

RICOTTA FRITTERS - DONNA HAY

As promised here’s my thermified recipe😉 Please let me know if you make them!

INGREDIENTS

*4 EGGS
*GRATED RIND OF 1/2 LEMON
*10G BASIL LEAVES
*60G PARMESAN IN SMALL CUBES
*SEA SALT & BLACK PEPPER
*100G PLAIN FLOUR
*2½ TEASPOONS BAKING POWDER
*720G FIRM FRESH RICOTTA ( from Deli is best)

EXTRA VIRGIN OLIVE OIL, FOR FRYING
LEMON WEDGES AND EXTRA BASIL LEAVES, TO SERVE

⭐️Place basil leaves and cubed parmesan into mixing bowl and mill 10 sec/ speed 9

⭐️Add eggs, lemon rind, salt & pepper and mix and mix 5 sec/speed 5.

⭐️Add flour and baking powder and mix 5 sec/speed 5. Add the ricotta and mix 30 secs dough mode to combine. You may need to use spatula to assist. The mixture will be quite thick!

Heat 2 teaspoons of oil in a large non-stick frying pan over medium heat. Cook ¼-cupful of the mixture in batches, flattening slightly, for 3 minutes each side or until golden and cooked through.

Serve with lemon wedges, extra basil and parmesan. Enjoy !

Golden Ricotta Fritters. Crisp on the outside, light and fluffy within.
All you need is a handful of ingredients, a quick batter and a hot pan. Perfect with a simple leaf salad and a squeeze of lemon.
