Healthy eating doesn’t need to be fancy! Keep things simple with easy to find ingredients. This is a gluten free and fresh olive oil and veggie omelette, avocado with tamari toasted pepitas and almonds. Mix your eggs with some olive oil for a puffy and crispy omelette, filled with mushrooms, capsicum, spinach or any of your favourites. Pre roast some almonds and pepitas for 15 mins on a low heat with tamari or gluten free soy sauce (do some extras for snacking later). Add a drizzle of good quality olive oil to your avocado and top with the nuts and seeds.
