FUDGY LIVER LOVING BEETROOT CHOCOLATE BROWNIES
Rich, chocolatey, naturally sweetened & liver-friendly - delicious served with a dollop of greek or coconut yogurt.
Ingredients
2 medium beetroot, cooked and peeled
½ cup almond meal
¼ cup organic cacao powder
¼ cup maple syrup (or honey)
¼ cup extra virgin olive oil or melted coconut oil
2 eggs
1 teaspoon natural vanilla extract
½ teaspoon baking powder
Pinch of celtic sea salt
1 cup dark high quality chocolate chopped into chunks (70%+)

🥣 2 medium beetroot, cooked and peeled
🥣 ½ cup almond meal
🥣 ¼ cup organic cacao powder
🥣 ¼ cup pure maple syrup (or honey)
🥣 ¼ cup extra virgin olive oil or melted coconut oil
🥣 2 eggs
🥣 1 teaspoon natural vanilla extract
🥣 ½ teaspoon baking powder
🥣 Pinch of celtic sea salt
🥣 1 cup dark high quality chocolate chopped into chunks (70%+)
Method
Step 1
Trim the ends off the beetroot and wrap them in foil. Roast at 180°C for 40–50 minutes, or until a knife slides through easily.
Allow to cool slightly, then rub the skins off (they’ll slide off easily).
Step 2
Preheat oven to 170°C fan-forced and line a small square or baking tin with baking paper.
Step 3
Add cooked beetroot to a food processor or blender and blend until completely smooth.
Step 4
In a bowl whisk eggs, oil, maple syrup and vanilla until silky. Fold in blended beetroot.
Step 5
Mix in almond meal, cacao powder, baking powder and salt (don't over mix!)
Step 6
Fold through chocolate chunks. Pour into tin and bake for 25–30 minutes, until just set on top but still fudgy inside
