⭐Savoury Ham & Zucchini Waffles⭐
These savoury waffles will be your new go to brunch recipe, super easy and quick to make whilst being packed with nutrients! If you don’t have a waffle pan, they taste equally great as fritters.
Ingredients:
⁃ 1 large zucchini
⁃ 1 egg
⁃ 2 tbsp flour of choice
⁃ Salt/pepper/garlic powder and whatever other spices you like to add
⁃ 1/4 cup chopped red onion
⁃ 3-4 slices of ham or bacon
⁃ Oil for pan (we like to use coconut oil)
Method:
1. Start by grating your zucchini and drain thoroughly by squeezing all the excess water out. Chop up your red onion and bacon/ham.
2. Add your chopped red onion, ham/bacon to a frying pan until browned. Remove from pan and set aside.
3. Start mixing the batter by adding your drained zucchini into a mixing bowl. Continue on to add the egg, spices, flour and mix together well. Lastly add the onion and ham to the batter.
4. Place batter into waffle pan and cook on each side till nicely browned.
5. Add any toppings of your choice, I personally like avocado, feta and some sprouts 😋 enjoy!
