                                            Matcha Protein Pancakes 🍵 
Antioxidants, polyphenols and L-theanine (relaxed focus fuel) and can be made gluten free and dairy free 👌🏻
Ingredients 
~ 3/4 cup of flour of your choice 
~ 40g of protein powder - I use  certified organic natural whey protein powder
~ 1 tablespoon of chia seeds 
~ 1 tablespoon of matcha - I use  certified organic matcha 
~ 1-2 teaspoons of baking powder
~ a pinch of salt - I use  sea salt flakes
~ 1 free range egg
~ 1 cup of milk of your choice
~ 1 tablespoon of pure maple syrup (2 if you’re a bit more of a sweet tooth 🦷) 
~ extra virgin olive oil - I use  
~ blueberries 🫐 - fresh or frozen
~ Greek yoghurt - I use  
Method 
1. Preheat a stainless steel, or other non toxic pan, until water bubbles in the pan and then turn down to low heat 
2. Sift the flour and baking powder into a bowl and add in the matcha, chia seeds and protein powder and combine
2. In another bowl, combine the egg, maple syrup and milk
3. Stir the mixture for a few minutes as it will thicken with stirring, until it is at your desired consistency 
4. Add a dash of evoo to the pan and swirl to coat the bottom before adding your matcha mix to the pancake size that you like
5. The mixture cooks quite quickly so don’t walk away from your pan! and flip them when they’re browned to your liking 
6. If you want to make a blueberry compote, place frozen blueberries in another pan over low heat and stir and heat until cooked to your liking or heat in a bowl in the microwave for 30 seconds to 1 minute 
7. Serve stacked with a dollop of Greek yoghurt, blueberry compote or fresh blueberries and a little drizzle of maple if you like
