Matcha Protein Pancakes 🍵

Antioxidants, polyphenols and L-theanine (relaxed focus fuel) and can be made gluten free and dairy free 👌🏻

Ingredients
~ 3/4 cup of flour of your choice
~ 40g of protein powder - I use certified organic natural whey protein powder
~ 1 tablespoon of chia seeds
~ 1 tablespoon of matcha - I use certified organic matcha
~ 1-2 teaspoons of baking powder
~ a pinch of salt - I use sea salt flakes
~ 1 free range egg
~ 1 cup of milk of your choice
~ 1 tablespoon of pure maple syrup (2 if you’re a bit more of a sweet tooth 🦷)
~ extra virgin olive oil - I use
~ blueberries 🫐 - fresh or frozen
~ Greek yoghurt - I use

Method
1. Preheat a stainless steel, or other non toxic pan, until water bubbles in the pan and then turn down to low heat
2. Sift the flour and baking powder into a bowl and add in the matcha, chia seeds and protein powder and combine
2. In another bowl, combine the egg, maple syrup and milk
3. Stir the mixture for a few minutes as it will thicken with stirring, until it is at your desired consistency
4. Add a dash of evoo to the pan and swirl to coat the bottom before adding your matcha mix to the pancake size that you like
5. The mixture cooks quite quickly so don’t walk away from your pan! and flip them when they’re browned to your liking
6. If you want to make a blueberry compote, place frozen blueberries in another pan over low heat and stir and heat until cooked to your liking or heat in a bowl in the microwave for 30 seconds to 1 minute
7. Serve stacked with a dollop of Greek yoghurt, blueberry compote or fresh blueberries and a little drizzle of maple if you like

I am a firm believer that the more you read, the smarter you become.
It doesn’t matter if you read fact or fiction - one will bring you knowledge the other will bring you creativity - but all of it brings you another perspective on the world, on a topic, on life.

I used to read 2-3 books a month easily, it’s my favourite thing to do for down time, but mama life doesn’t leave as much time for it as before so last year I wrote a list and made a commitment to myself to read. I started 12 books, one for every month, but some of them I didn’t vibe with so this is my complete list. Aiming for 12 total this year 😉

Standouts from this line up were definitely:

The last few years have been a huge transition for me in every way since becoming a mama. I’ve changed so much and so has what I want for this business baby of mine.

It’s an absolute privilege that I don’t take for granted being in this role and I’m so fortunate that I’m able to work around being a full time mum and I get to spend every moment of these precious and fleeting days with my little man.

In saying that, working around a toddler is no easy feat (iykyk) and it’s also taken me a minute to figure out the direction I want to go while also being able to be a present mum, involved in everything he does.

I whole heartedly believe that health should be accessible to absolutely everyone. That lovely old quote ‘give a man a fish and feed him for a day or teach a man to fish and you feed him for a lifetime’ - this is the whole inspiration for what’s coming.

So 1:1 consults are no longer available for the time being and in its place I will be rolling out tools to teach you everything that I would one on one, that you can use for your specific health need but at a more affordable price and that you can do at your own pace 🌱

It will be like having me in your pocket.

Bear with me as these come to fruition, I want them to be perfect and answer every single question you have around each topic to educate and heal 👌🏻

First up, there will be an incredible FREE resource coming your way that you can access forever with new content being added regularly so watch this space!
