Who said meat can’t be a treat?!!
Perhaps a side of mashed potatoes and arugula would make it complete!

Ingredients:
1lb Pork Tenderloin
2 Apples (sliced)
4 parsnips (chopped)
1 Spanish Onion (diced)
2 Tbsps Maple Syrup
1 Tbsp cinnamon

Cut slits into your pork tenderloin about 3/4 of the way through. Wedge half of the apple slices into the slits.
Add remaining apples, parsnips and onions to the bottom of the slow cooker. Lay the pork tenderloin on top. Drizzle maple syrup and sprinkle cinnamon over everything. Cook on low for 4 hours.
Remove pork and vegetables from the slow cooker and divide onto plates. Enjoy!

Blend:
3/4 cup almond milk (or your favourite milk)
1/2 cup puréed pumpkin
1 tbsp chia seeds
2 medjol dates
1 tsp pumpkin pie spice
Pinch of sea salt
Handful ice cubes

*Add protein powder and extra milk to turn it into breakfast!

Ingredients:
1/2 cup Salted Butter (softened)

1 cup Coconut Sugar (or cane sugar)

2 Egg

1 cup Pureed Pumpkin

2 cups Spelt Flour (or GF all purpose flour)

2 tbsps Pumpkin Pie Spice

2 tsps Baking Powder

Recipe:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, beat butter and sugar together. Add the eggs and pureed pumpkin and beat until creamy.

In another bowl, combine the flour, pumpkin pie spice and baking powder. Add the wet ingredients to the dry ingredients and mix them well.

Place about two tablespoons of dough per cookie onto the baking sheet and slightly flatten, leaving space between cookies.

Bake for eight to ten minutes. Let the cookies cool for at least five minutes. Enjoy!
