(Pretty) Healthy Chocolate Brownies Sugar-free (mostly ;)
1 3/4 cups pitted dates (i buy the bag of dates at Costco. You can spend a lot of $$ on medjoul dates, but if you're using them for baking, the smaller, stiffer ones are just as good)
1 cup hot water
1/2 cup butter softened (or coconut oil for slightly different flavour)
2 cold eggs
1 tsp vanilla
3/4 cup cocoa powder
1/2 cup flour (I used gluten free, the Robin Hood blend, it's pretty good but regular flour tastes better, you can also use ground oat flour, it would give a slightly heavier texture)
Sea Salt Caramel Chips - Sprinkle
Spray 8x8 baking pan with natural oil spray (The avocado oil at Costco is my favourite) Preheat oven to 350
In a food processor or blender puree the dates and hot water until smooth. Add butter, cream until smooth, add eggs and vanilla cream until smooth. Add cocoa and flour, mix on low until combined
Spread batter into pan. Sprinkle with Chips
Bake 20-25 min until edgees re set
Brownies last up to 1 week in a sealed container in the fridge
Except for the Sea Salt Caramel Chips these are sugar free and low in fat (for a brownie). So you can enjoy one guilt-free, and truly enjoy it! But one, not a whole row! :)
