As I predicted back in December of 2025, 2026 would be all about fibre and gut healing. People are slowing down and paying attention to how their bodies feel and they are acting accordingly.
Increasing fibre in my clients’ diet has been at the top of the list, along with ensuring they are getting in adequate and varied protein. So, if you are looking for something easy, that lasts, is filling, high in fibre and protein and actually tastes good till the last mouthful? I got you!
This Greek Style Bean Salad is all of those things and more. Feel free to make it your own by adding grilled chicken or serving it with a leafy salad; no matter how you spin this one, it’s delicious, so be sure to save this recipe for later!
Greek Inspired Bean Salad:
1 can White beans
1 can Chickpeas
1/3 cup Red Onion, diced
1 Red Bell Pepper, diced
1/2 Cucumber, deseeded and chopped
1/3 cup Pitted Kalamata Olives
1/4 cup Extra Virgin Olive Oil
3 tbsps Lemon Juice
1 tsp Dijon Mustard
1/2 cup Feta Cheese (crumbled)
Sea Salt & Black Pepper (to taste)
Directions:
1. Drain and rinse white beans and chickpeas and add to a large mixing bowl or sealable container.
2. Add in onion, red pepper, cucumber and kalamata olives and give a good stir.
3. In a seperate small bowl mix together oil, lemon juice and dijon until completely combined. Pour over bean salad and mix. Top with feta and enjoy.
