What we eat also plays a role in our eye health! Here are five yummy recipes that have ingredients that keep our eyes healthy. More information on how they help our eyes can be found in the caption! ๐ฝ
Zucchini Fritters: Zucchini is rich in lutein and zeaxanthin, two antioxidants that were found to prevent age-related macular degeneration. The carotenoid Beta-carotene can be converted into vitamin A in the body. The presence of Vitamin A in the squash helps in active cell development in the eyes, which enhances vision and helps in preventing age-related medical conditions affecting the eyes. Not only are these fritters good for your eyes, they are easy to make with only three ingredients!
Pan Roasted Wild Salmon with Grape Tomatoes & Wilted Spinach: Salmon is rich in B-vitamins and omega-3 fatty acids, both of which can help protect eyes, particularly if you have a family history of either macular degeneration or cataracts, along with spinach that is loaded with antioxidants. Spinach not only improves vision, but also helps maintain your vision long-term.
Fruit & Nut Studded Saffron Rice Pilaf:
Recent research has indicated that the spice saffron may help protect the vision cells from damage in blinding eye diseases such as AMD and retinitis pigmentosa. Saffron are the yellow-orange stigmas hand-plucked from small purple crocuses โ it is pungent and aromatic and used to flavor and tint food. It is also the worldโs most expensive spice. Fortunately, a little saffron goes a long way. This recipe is based off of an Armenian dish that typically accompanies roast poultry or ham. The apricots provide beta-carotene, an antioxidant important to eye health.
Pumpkin Mousse: Filled with beta-carotene, which helps fight against macular degeneration, it will nourish your eyes and satisfy your sweet tooth.
Plum & Blackberry Almond Crumble: Full of purple fruit, this recipe provides health enhancing flavonoids, phytochemicals, and antioxidants. The fruit also provide dietary fiber, vitamins A and C while the almonds provide vitamins A and C while the almonds provide vitamin E, good for eye health.
