Sunday granola making. Adapted from a recipe by .hemsley Eat Happy:

250g quinoa flakes
350g chopped mixed nuts- I went for walnuts, almonds, Brazil’s and hazelnuts
350g mixed seeds - I went for pumpkin, sesame and sunflower
200g desiccated coconut (coconut flakes would be nicer probably but I didn’t have any in)
200g mixed dried fruit- I went with cranberries, black cherries and a handful of raisins
5 tbsp coconut oil
3 tbsp maple syrup
2 tsp vanilla extract
1 tsp ground ginger
2 tsp ground cinnamon
A pinch of pink Himalayan salt

Pre-heat the oven to 160 degrees.
Add the nuts, quinoa flakes and seeds to a bowl and stir. Melt the coconut oil and add maple syrup and vanilla essence. Add to the bowl and stir. Spread out on 2 lined baking trays and bake for around 20 minutes. Check half way through and add the spices and coconut. Remove and add to your jar to store.

Makes a jar and a half (around 14 servings or 1.3kg). I’ll be having mine for breakfast tomorrow with Greek yoghurt and grated apple.

Courgette polpette for dinner tonight - 3 grated courgettes, 2 tbsp parmesan, half a mozzarella ball, one clove of garlic, a handful of parsley, one beaten egg and some gluten free breadcrumbs. Rolled into balls and baked at 200 degrees for 15 minutes. So easy my 2 year old daughter made most of it!
Full of phytonutients, magnesium, protein and fats and low carb
