Creamy pesto & kale pasta ๐Ÿฅฌ๐Ÿง€

Mix up your lunch time meal prep with this creamy, green pasta dream ๐Ÿคฉ

Ingredients:
- 1 tbsp extra virgin olive oil ๐Ÿซ’
- 2 red onions, thinly sliced ๐Ÿง…
- 300g kale ๐Ÿฅฌ
- 300g wholemeal pasta ๐Ÿ
- 4 tbsp soft cheese ๐Ÿง€
- 4 tbsp green pesto
- โ 8-10 cherry tomatoes ๐Ÿ…
- โ 3 chicken breasts
- โ 4 tbsp garlic & herb seasoning ๐Ÿง‚

Method:
1. Coat the chicken in the garlic & herb seasoning and airfry until cooked through.
2. โ In the meantime, heat the oil in a large pan over a medium heat. Fry the onions for 10 mins until softened and beginning to caramelise. Add the kale and 100ml water, then cover and cook for 5 mins more, or until the kale has wilted.
3. โ Cook the pasta following pack instructions. Drain, reserving a little of the cooking water. Toss the pasta with the onion mixture, soft cheese, pesto and tomatoes, adding a splash of the reserved cooking water to loosen, if needed.
4. โ Cut the chicken into slices & place on top to serve & enjoy! ๐Ÿ˜‹

I am so excited to sayโ€ฆ I have taken on a new role as head nutritionist at The Dynamic Performance Hub - a world class horse & rider facility.

The Hub is one of a kind and allows the rider to prioritise their health & fitness, as much as they do for their horses ๐Ÿด

My new role includes 121 consultations & interventions, testing - including skinfold measurements ๐Ÿค, free reign to come up with new, innovative ideas (winter packs coming soon ๐Ÿ‘€) & managing the smoothie bar ๐Ÿคฉ

Iโ€™ve had the most amazing first month at The Hub supporting the most inspiring, elite athletes, working in a multidisciplinary team, as well as some social media workโ€ฆ keep your eyes peeled ๐ŸŒ ๐Ÿคฃ

I will be taking you all on the ride ๐ŸŽ
