Surprise treats from our garden! ๐ซ๐ซ๐ซ Blackcurrant Flapjack Scroll down for recipe...
In April we moved ๐ฎ๐ช๐ฌ๐ง and we've been so lucky with our new garden. I was tempted to plant a load of vegetables when we arrived, but apparently the best thing to do is live with a garden for a year, to get to know it first So far weโve enjoyed broccoli, kale, a range of herbs, and its looking like weโll get potatoes and onions too, result!
๐ฅณ๐ฅณ Most recently weโve had a crop of blackcurrants ๐ซ This sharp but delicious fruit has a distinct flavour, is rich in vitamin C and contains a range of other vitamins, minerals and antioxidants, most notably iron, manganese and polyphenols called .
Anthocyanins are beneficial plant pigments that give fruit and vegetables their deep red, purple or blue hues ๐๐ซ๐๐Numerous studies have suggested that anthocyanins have a wide range of health-promoting properties, such as being beneficial for our gut bacteria and reducing inflammation, as well as for our cardiovascular health, eyes/vision, neurological function, and may also be protective against cancer and diabetes too. So bring on those blackcurrants!
Moist and delicious, these flapjacks are an excellent source of fibre, are higher in protein and lower in fat than the average flapjack recipe.
225g Blackcurrants
150g Oat flakes (porridge oats)
2 tbsp Almond nut butter, smooth (well stirred for a good mix of oil+solid!)
2 tbsp Flax seed, milled
1 tbsp Local honey (Maple syrup =vegan)
50g Coconut Oil, melted
๐ซ Preheat oven to fan 170ยฐC/gas mark 5.
๐ซ Melt the coconut oil (or butter) gently in a small pan.
๐ซ In a large bowl, mix together well the oats, almond nut butter, milled flax seed, honey and melted coconut oil, then stir through the blackcurrants.
๐ซ Use an extra k**b of coconut oil to grease a loaf tin, then pour the mix into the tin and press down firmly.
๐ซ Bake for 30-35 minutes.
๐ซ Remove from the oven, allow to cool, then slice into 5 pieces. Enjoy! ๐
