These are soooo tasty! They are filled with ingredients that keep hormones happy and my children love them too!
Sweet potato helps to stabilise blood sugar, reduce inflammation and aids digestion. Their high fibre helps to metabolise excess estrogen, build progesterone and stabilise energy levels. They are high in vitamin B6 which helps manage mood swings.
Almond flour helps to reduce PMS. It is rich in magnesium, helps to reduce bloating, balances estrogen levels, provides anti-inflammatory support and reduces carb cravings.
Dark chocolate reduces the stress hormone cortisol, stabilises serotonin, improves insulin resistance, improves libido, reduces PMS cramps and boosts serotonin.
Mix the following in a bowl:
🦔 1 cup of cooked sweet potato that has been oven baked and mashed after removing the skin
🦔 2 eggs
🦔 1 table spoon of mild olive oil or melted coconut oil
🦔 2/3 cups of coconut sugar
🦔 3 teaspoons of ground cinnamon
🦔 1/2 teaspoon of sea salt
🦔 1 teaspoon of baking powder
🦔 4 cups of almond flour
The above makes 12… halve the ingredients to make 6. Use your hands to create equal balls and then flatten them slightly.
Chop a handful of high quality dark chocolate and place 2-3 small chunks into each cookie.
Arrange on a tray lined with baking paper (you will need 2 trays for 12 cookies).
Bake for 10 - 12 minutes at 180 degrees.
