When it’s January 7th and you’ve eaten a salad every day for 2 days 😂🙈
One “resolution” I attempted to make this year was to focus more on my meals and less on my family’s meals. So instead of thinking “what am I cooking them for lunch/ dinner?”, I’m trying to reframe it to “what do I need to be eating for lunch/ dinner today?”
This has definitely helped so far, I’m making sure I’m getting what I need (and is going to support stabilising my blood sugar throughout the day) and I’m making a lot of that, then adding carbs into theirs in the form of baby potatoes, jacket potatoes and pasta.
As the only cook in our house it can get on top of me and I end up just eating what they’re eating (then paying the price and feeling rubbish). So for now, it’s all about what I need and having plenty of easy carbohydrates on hand to bulk up meals for everyone else in the house.
This is my lunch today, I added pasta, sweetcorn and mayo to my husband’s. Also I know I’m a pushover but I’m also a feeder 😂 and the man would be surviving on weetabix, double deckers and fumes otherwise 😂
