I’m totally obsessed with these Korean glass noodles - otherwise known as Dangmyeon. And - they’re healthy and gluten-free!! ❤️
This is my “busy mom” version of the classic dish Japchae!

Recipe:
Japchae
Step 1 cut the dry noodles
Step 2 steam the veggies - I like using frozen green beans
Step 3 while those are cooking, chop an onion and some garlic
Step 4 take out your steamed veggies and put them aside
Step 5 add onion and garlic to the pan and sauté on low heat
Step 6 chop mushrooms - ideally sh*take or wood ear but I often use just regular white mushrooms
Step 7 make your sauce - I use a combination of coconut aminos, sesame oil, and a bit of pure maple syrup
Step 8 add your mushrooms to the pan with the onions and garlic, and then pour the sauce on top. Cover and sauté for about 10 minutes or until mushrooms are soft.
Step 9 while the mushrooms are cooking, add boiling water to the dry noodles. Cover the noodles with the hot water and let them sit for 10 minutes.
Step 10 Drain the noodles and add them to the pan with the mushrooms. Stir well and turn the heat down to very low.
Step 11 add back in your steamed veggies and spinach as well as desired. Mix well!
Step 12 Serve with protein of choice!
