Breakfast for Dinner 🍽😋

Just Egg in a non stick pan on low-medium heat
Sprinkle oregano, parsley & cracked pepper
Add vegan mozzarella shreds
Once melted add mushrooms, onions & peppers that have been cooked before hand.
Flip one side up over the top
& serve.

Ratatouille couscous

Recipe -
Cook a cup of couscous in water, plant based butter and a pinch of pink Himalayan salt
Cook mushrooms, grape tomatoes & thinly sliced zucchini
Season veggies with ms dash salt free garlic and herb seasoning, cayenne pepper, cracked black pepper & parsley.
Add daiya pepper jack shredded cheese
Than add the couscous to the veggies & sprinkle with turmeric, more cayenne, cracked black pepper & nutritional yeast.
Cook for 1-2 mins to melt cheese & ENJOY!

Quick, simple to make, filling, healthy dinner - Pea power bowl.
Recipe -
Steam 1 bag of sweet peas
Slice 1 carton of cherry or grape tomatoes 🍅
Slice 1 avocado 🥑
Sprinkle 4 tsp of h**p seeds
Cracked black pepper
A pinch of cayenne (if you like it spicy)
1-2 tsp of balsamic vinegar
Squeeze 1 lime
Enjoy!

Tonight's dinner - Sauteed green beans with red peppers, fresh garlic & red pepper flakes on a bed of mashed cauliflower 😋
Green beans -
Avocado oil in pan, add 1 bag of fresh green beans
Cook for about 10 mins on high, stiring, add 1 red bell pepper a few mins into cooking.
Add 1 tsp of minced garlic, 1 tsp of plant based butter & sprinkle red pepper flakes & black pepper.
Mashed cauliflower -
Cook fresh or frozen cauliflower pearls in microwave, in a blender add 1 cup of plant based milk, 1 tsp of minced garlic, 2 tsp of plant based butter, black pepper & a pinch of cayenne, than add cauliflower & blend.
