NEW RECIPE ALERT 🍣Walnut Crusted Salmon with Asparagus 🍣

Ingredients
* 2 Tbsps walnuts (very finely chopped)
* 1 stalk of green onion (very finely chopped)
* 1/4 tsp sea salt
* 1/2 tsp Italian seasoning
* 1/2 tsp lemon juice
* 1 Tbsp. avocado oil (divided)
* 6 ozs salmon fillet
* 4 cups asparagus

Directions
1. Preheat the oven to 350 and line a baking sheet wit parchment paper.
1. Combine the walnuts, green onion, salt and Italian seasoning together. Add the lemon juice and 1/3 of the oil and stir to mix.
1. Rub another 1/3 of the oil over all sides of the salmon fillets and place the salmon on the prepared baking sheet, skin side down.
1. Spoon the walnut mixture on the top side of the fillets and gently press it down with the back of the spoon so the mixture stays in place.
1. Toss the asparagus in the remaining oil and season with salt to taste. Place seasoned asparagus in an even layer on the baking sheet with the salmon.
1. Bake for 12 to 15 minutes or until the salmon is through and flakes easily and asparagus is tender. Divide between plates and ENJOY!

Note: This recipe is 2 servings. Each serving contains 1 serving of protein, 2 serving of veggies and 2 serving of essential fat.

90% of the time, you should be eating and living the way we teach you and recommend in the manual. 10% of the time, you can do what you want beyond these guidelines. 🤯
The important part is not to shame yourself for your choice. If you take a vacation meal (in that 10%, a conscious decision allowing yourself to enjoy whatever you want.) but it turns into a whole day, a couple days, weeks... then you learn from that choice and that experience.

Easy Broiled Salmon

1 lb wild-caught sockeye, coho or king salmon (skin-on)
2 tbsp butter
1 tbsp your favorite seafood seasoning blend, no sugar added
1/2 tsp. korean pepper flakes

1. To begin, preheat the broiler and set to “HI”. Line a baking sheet with parchment paper and set aside.

2. Now, pat salmon dry and rub the ghee on the flesh side of the salmon. Season with a mixture of your seafood seasoning and Korean pepper flakes. Then transfer the salmon fillets to the prepared baking sheet.

3. Transfer the salmon to the oven and broil for 10 minutes (maybe longer depending on the size of your fillet). Remove from the oven, let it rest for about 3 minutes, and serve with roasted veggies or a salad and fresh lemon or lime juice.

Cilantro Caulifower Rice

2 tbsp avocado oil
1 12- ounce bag of frozen riced cauliflower
2 tbsp. freshly chopped cilantro leaves
1/2 tsp garlic seasoning

To Serve:
Lime wedges
Sauteed vegetables
Roasted meat or chicken (optional)

1. To begin, heat a large cast iron or heavy non-stick pan with avocado on high heat. Once the pan is hot, add the riced cauliflower and start to toss immediately (keeping the heat on high). Continue to cook the rice (while continuously tossing or folding until all the liquid has evaporated and the rice is firm and fluffy (about 7-10 minutes).

2. Now, add the cilantro and garlic seasoning to the rice and toss to combine. Serve the rice immediately with fresh lime wedges.

Cilantro Lime Chicken

1/4 cup finely chopped cilantro leaves
1/4 cup olive oil
2 tbsp Bragg's liquid aminos
4 cloves garlic, finely minced
1 tsp lime zest
Juice of 1 lime
1/2 tsp Himalayan sea salt
1/2 tsp ground cumin
1 1/2 lbs boneless, skinless chicken breast
Lime wedges to serve

1. To begin, add the cilantro, olive oil, liquid aminos, garlic, lime zest, lime juice, salt and cumin into a large bowl and stir to combine. Pour about 2 tablespoons of the marinade into a separate bowl and set it aside for later.

2. Now, trim the chicken thighs of any extra fat and transfer them into the large bowl of marinade. Toss the chicken to make sure its well coated with the marinade. Cover the bowl and let the chicken marinate for at least 2 hours.

3. Now, Heat a grill pan until it starts to smoke a little. Brush a little butter onto the grill pan. If you are using an outdoor grill, heat it accordingly and move on to the next step.
Gently shake the chicken thighs to remove any access marinade and add the chicken to the grill pan/grill, skin side down. Cook the chicken for 4-5 minutes per side or until the internal temperature of the chicken reaches 165˚F. Transfer the chicken to a serving dish to rest.

4. Drizzle the untouched, leftover marinade over the chicken and serve with lime wedges.

Salsa Verde Chicken Bowl

1.5 lbs boneless, skinless chicken breast
1 16-ounce jar salsa verde sauce, no sugar added
1/4 tsp ground cumin
1/2 tsp ground coriander
1 red jalapeno pepper, diced
1 onion, sliced
2 cloves garlic, finely minced
1 tbsp olive oil
2 tbsp butter
2 red/orange bell peppers
Garlic seasoning
2 12-ounce bags frozen cauliflower rice
2 tbsp chopped cilantro leaves

Other Ingredients:
1 head romaine lettuce, thoroughly washed and chopped
1 small red onion, diced
1 avocado, sliced or guacamole
Lime wedges to garnish

1. To begin, add the chicken, salsa verde, cumin, coriander, jalapeño pepper, onion, garlic & olive oil. Cover the instant pot & close the vent. Select “MANUAL” or “PRESSURE COOK” and set the time to 30 mins.

2. In the meantime, melt 2 tablespoons of butter over medium-high heat in a large skillet. Add the bell peppers and sauté for about 5 minutes or until the peppers are tender. Season with garlic seasoning. Remove the pepper from the pan & set it aside.

3. In the same pan, add the remaining tablespoon of butter to the pan & turn the heat up to high. Add the cauliflower rice & continue to sauté, on high, for 5-7 minutes, continuously stirring. Once the cauliflower rice is tender & all the liquid has dried up, season with garlic seasoning and add the cilantro in. Toss the cauliflower rice, remove from the heat and set it aside.

4. Now, when the chicken is ready, release the steam from the instant pot & remove the cover. Remove the chicken from the sauce, shred it and set it aside. Turn the instant pot to “SAUTÉ” and simmer the sauce for 5-7 minutes until it begins to thicken. Return the chicken to the sauce and continue to sauce for a couple minutes. Turn the instant pot off and assemble the burrito bowl.

5. Add the lettuce to the bottom of the bowl, then top with the cauli-rice, chicken, sautéed peppers, red onion & avocado slices. Garnish with lime wedges & more cilantro.

Garlic Butter Salmon

1 tbsp olive oil, divided
5 cloves garlic, divided
1 pint cherry tomatoes, halved
8 basil leaves, chopped
2 tbsp balsamic vinegar, no sugar added
Himalayan sea salt and pepper
4 salmon fillets, skinless and boneless
1 tsp lemon zest
2 tbsp salted butter, cut into cubes
1 tsp lemon juice
1 tbsp freshly chopped parsley leaves

1. To make the tomato mixture, mince 2 more cloves of garlic and add it to a bowl with the tomatoes, basil leaves, balsamic vinegar and 1 tablespoon of olive oil. Toss to combine, then season the mixture with a couple pinches of salt and pepper. Stir one more time and set the mixture aside until you’re ready to serve. If you’re making this ahead of time, cover the tomatoes and store them in the fridge until you’re ready to eat.

2. Now, move on to making the salmon. Pat the salmon fillets dry and season with a few pinches of salt and pepper on both sides. Then rub the lemon zest all over the salmon pieces.

3. Mince the last 2 remaining cloves of garlic and set aside. Now, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Place the salmon in the pan, flesh side down, and sear for 3 minutes or until a golden crust has formed. Flip the salmon and continue to sear for another minute then immediately add the butter and minced garlic to the pan. Move the garlic and butter around to begin to cook the garlic.

4. Once you start to smell the garlic, tilt the pan a little and baste the salmon with the butter and garlic for about a minute. Remove the salmon from the pan and set aside.

5. Turn the heat on the stove off, but leave the pan on the hot surface and add the lemon juice and parsley to the pan. Stir to combine and pour the sauce over the salmon.
