Happy Monday! It's time for your mental health Monday check-in. Anyone who knows me understands that when I start feeling a bit overwhelmed, I sometimes turn to baking as my therapy—today was no different. I found myself baking a delicious five-flavor pound cake from a recipe I spotted online, and I’m excited to share it with you. Baking is my escape, my way to find peace, and I’d love to hear how you handle moments of heaviness. Here's my go-to pound cake recipe with a twist that I found online: I’ve halved the usual amounts : 1.5 cups of sugar, 1.5 cups of cake flour, two sticks of butter, three eggs, and a blend of flavors, half a teaspoon each of rum extract, butter extract, lemon extract, vanilla extract, and coconut extract. I also add four ounces of cream cheese. I use a mini cheesecake pan from Williams Sonoma, dealer’s choice, but you might find similar pans on Amazon.
