💫Things my kids have eaten this week 💫

I’m constantly trying to come up with new fun ideas for snacks, breakfasts, and lunches to feed my kids. Here are a few of the things that I made (and they actually liked) this week!

Let her crack the eggs. 🥹🥚
Yes, it’s a little messy.
Yes, sometimes we fish out a shell or two.
But every time I let her help in the kitchen, I’m watching something bigger than breakfast being made.
She’s building confidence.
She’s learning real-life skills.
She’s feeling trusted.
And we’re connecting in a way that doesn’t happen when I rush to “just do it myself.”
When kids are invited into the kitchen, they don’t just learn how to cook — they learn that they’re capable. And when they feel capable here, they’re more willing to help everywhere else too.
It takes a little more time now…
But it’s raising helpers for life. 🤍
Let them stir. Let them pour. Let them crack the eggs.
The mess washes off — the confidence sticks. 💛

Years ago, when gluten-free diets were really starting to become a ‘thing’, GOOD gluten-free bread was really hard to come by. You kind of felt like you were eating cardboard, and not bread. But alas, there are some amazing brands over the past few years that have come out with some really delicious gluten-free bread. Hallelujah. EASY PASTA DINNER 🍝

On nights when my brain just doesn’t want to think about dinner and we are running low on groceries, I raid my pantry and freezer. I almost always have some type of ground meat, pasta, and frozen veggie on hand.

This easy ground beef and kale pasta dish is a winner every time!

RECIPE:
- 1 lb ground beef or turkey
- 1 box pasta (I used )
- 1 bag frozen kale
- 8oz package mushrooms, finely chopped
- 1 jar red sauce

- Boil the pasta according to package instructions.
- Cook your beef in a cast iron skillet over medium heat. Season with garlic powder, salt and pepper. Stir occasionally for about 10 minutes until meat is brown.
- Remove meat and cook the mushrooms in the same pan until they are soft and brown, add the kale for about 2 minutes to wilt.
- Add the meat back in and pour over the pasta sauce and stir.
- Add the meat sauce mixture to the drained pasta and stir together!

It can be so hard when you have food allergies and still try to be a part of holidays that are so centered around food. My best piece of advice is to always bring a dish when attending someone else’s Thanksgiving meal so that you can know that you will at least have something to safely eat. Or you could just host Thanksgiving at your house, which is where this list of recipes comes in clutch for you!

If you’ve ever tried to make a paleo pie crust that’s actually flaky, you know it can be tricky! Most grain-free crusts turn out crumbly or dry. But this recipe changes everything. It is made with almond flour and is SO perfect 👏🏼

Halloween Protein Blondies! 🎃

Need an easy last minute sweet treat idea that will actually keep your kids full before the Halloween candy tonight?! I GOTCHU.

This is your classic chickpea blondie, but with added protein! It is going to be the perfect snack, and I bet you have everything you need in the pantry right now.

Of course I used because we alwayssss have it stocked in our house.

RECIPE:
- 1 can chickpeas, rinsed and drained
- 2/3 cup vanilla protein powder ( I used earth chimp)
- 3 tbsp coconut sugar
- 1/4 cup maple syrup
- 1/2 tsp baking powder
- 2 eggs
- 2 tsp vanilla extract
- pinch of salt
- 1/2 cup chocolate chips
- orange sprinkles and google eyes (optional)

Preheat the oven to 350 degrees. In a food processor, combine all of the ingredients expect for the chocolate chips. Turn it on and blend for about 30 seconds, until you have a smooth batter.

Take out the blade from the processor, and add in the chocolate chips, stir them in. Use a spatula to scrape the batter into a parchment lined baking dish and smooth out the top.

Bake for about 30 minutes, until it is cooked all the way through. Let the blondies cool for at least 10 minutes before adding fun sprinkles and decorations!
