This was something I started years ago when I first learned about my first food allergy, gluten. However, I'll go into the boring details later of my journey but I felt “what am I waiting for? Hopefully this will help guide your way through food on this wonderful planet we live on.Let's start with the basics of why you should read up on this kind of stuff:
-If you just discovered your allergy, you're in the right place.
-You have the allergy and you're sick and tired of the same old meals and restaurants, you're in the right place.
-If you think you might have some type of food allergy and not sure what to do, you're in the right place.
-If you're wondering if you should cut wheat and gluten out of your diet just because, you're in the right place (although, I don't advise it and we will go into that later).
-If you think having a food allergy is a complete hoax or bullsh*t... WELL my friend, you're in the right place for this too. My goal is to create an atmosphere of hope that even though you may have 1, 2, or 10 food allergies... that it is possible to live a normal lifestyle. Trust me, no one loves food more than me. I'm Italian, so let's be real, it has been formulated into my genetics before I could even produce a heartbeat. When I began this page, I originally had the intent of bringing awareness to all things gluten. Fast forward two months into this bad boy and POOF I was told that I have 6 additional food allergies. Aint that something! Funny how the universe works. One thing I do know for sure on is anything and everything about gluten. So as you can imagine, the six additional food allergies have thrown a curve ball but I'm ready to take on this challenge. At this point in time, I am currently in the process of eliminating, keeping a food diary, and after two months working these bad boys back into my diet to see how I react to each. Just a little recap… I’m also allergic to the following:
-Baker’s Yeast--yeah, I know. Goodbye desserts, cakes, whatever.
-Wheat--Obviously we already KNEW that!
-Egg Whites—Okay, so all eggs… got it.
-Oats- Could care less. Which obviously ties in with gluten and wheat.
-Soybeans—Cool, that’s in everything too.
-Tomatoes—Practically a sin to my heritage.
-Corn- FML… bye taco Tuesday. Mind you this is ALL under a doctor and nutritionist care so PLEASE don’t do this process without consulting with your medical staff.
