We’ve been enjoying quick spinach salads during these hot summer days dressed with “plant powered” Hidden Valley Ranch. If you haven’t tried it, it’s worth checking out. You can find it in most major stores and it’s practically priced unlike many vegan alternatives.

Threw together a roasted vegetable peanut butter pasta for a quick lunch. Loaded with roasted carrots, onions, mushrooms, green bell pepper, garlic, chickpeas, and beet. The beet bled into the pasta to make it a beautiful color. This wasn’t the plan but it turned out looking great. 😝

Peanut rice topped with fresh green onion but somehow the real star of the show was the air fried asparagus! If you haven’t tried this, it is a must.

Toss some asparagus in a bowl with a little oil, salt, and pepper. Put it in the air fryer at 375 for 10-12 minutes. It completely transforms the flavor without any extra effort.
