Two years ago, if I wanted harissa, I had to make it myself. And I could never make it "authentic" without baklouti peppers. Now it's on the shelf .
I always wonder, when I see chiles in foods from outside the New World, what that food tasted like before Columbus. Whether it's Tunisia, India, or Thailand, chiles were unheard of before then.

Knowing how happy spicy food makes ME, I can imagine all the light bulbs that went off in those international chefs the first time capsaicin hit their tastebuds. 🌶🔥😳😲😀😍

Siempre me pregunto, cuando veo chiles en alimentos de fuera del Nuevo Mundo, lo que esa comida sabía antes de Colón. Ya se trate de Túnez, India o Tailandia, los chiles eran inauditos antes de entonces.

Sabiendo cómo la comida picante feliz me hace, puedo imaginar todas las bombillas que se disparó en los chefs internacionales de la primera vez que la capsaicina golpeó sus papilas gustativas. 🌶🔥😳😲😀😍
