Dinner last night! Beef sausages, green beans, apples, and zucchini fritters! Don't forget about zucchini fritters. It may not be summer but it is at Costco. πŸ˜† My husband brought home a big bag of zucchini and yellow squash. I had to get creative.

I had a patient ask me if they could eat this. As far as I can tell the ingredients look good! So I finally bought a box and tried it. I made flat bread out of it because frankly, pizza isn't great without cheese and I know most of my followers are not eating cheese so I didn't want to tease you! You're welcome. πŸ˜† But I do mention eating diet- friendly flatbread, buckwheat bread, or naan bread (from the diet book) and dipping it in olive oil, vinegar and spices to get some extra healthy fats in. So... This can be another option. I cut it up in squares which makes it look like graham crackers. Yum! You could pretend but your taste buds would be confused and your expectations would not be met! I followed directions (rare for me!) and tried the recipe. The flatbread is ok. It needs more salt or something. But it does hit the bread craving button a little bit. And it's soft and a bit chewy. I'm sure you could add, to the ingredients, something Awesome. Make it into avocado toast or add olives or whatever your creative mind can think of that's on your eat list! ❀️
**This experiment was also prompted by a complaint about our quinoa pizza crust. Someone pointed out that the recipe in the diet book calls for too much olive oil. I made the recipe and there was definitely a typo when I revised the book. So I apologize to any of you who may have wasted time and food to make it. Only use 1/4 cup of olive oil, not a cup!!! πŸ™„

Burger night!! This could be a bison, beef, turkey, or chicken burger, even venison or elk!! So good!! Wrap it in lettuce, eat it with a fork or if you have introduced other foods then maybe you have other options. I love sauteed onions and mushrooms with unsweetened ketchup or mustard, avocado and sauerkraut. πŸ€ͺ

Happy Valentine's Day!!❀️
I hope everyone is having a great day. I'm at work today and it's not at Red River! And it's not Sprouts anymore. I now work part time ...The PF Lounge. It's in the same shopping center as Sprouts. And you know, this is a great day to introduce this place to you if you are local and haven't seen it. We have a chair that helps men and women strengthen their pelvic floor. If you have incontinence, a prolapse, prostate troubles, painful s*x, ED complications, or things just aren't feeling right down there... then you should come by and check this chair out! I'm here on Thursdays, Fridays and Saturdays. Anita is here the other days! Closed on Sundays.
We also have a cold plunge, infrared sauna and an EMSzero machine, which helps fat loss and build muscle.

Happy Valentine's Day!!❀️
I love the convenience of meatballs for a quick protein snack! This is an oldie but goodie meatball recipe I've been making since my kids were little. It's Nom Nom Paleo's wonton meatballs. I replace the pork with turkey but you didn't have to. It also has shrimp, cilantro, coconut aminos, green onions, and some other things.. You can Google them and get the exact recipe. I love Nom Nom Paleo. A lot of her recipes are anti-inflammatory friendly! 😁 Check out her Paleo lunchbox ideas too. She's dairy free as well.
Don't forget this beets! We love yellow beets not just because they taste good but because beets help with nitric oxide production and that helps with blood circulation and getting oxygen to those muscles which you may use tonight....😘

These are the sticky notes I have above my desk at home! I keep thinking about the "change" one. I kept having this feeling that I needed to share it. It goes through my head often. We have to change to get different results. Think about a recipe. We change one thing and it can change the whole experience of eating that meal or a dessert. Just one little thing. Maybe it's an ingredient, maybe it's the oven temp, maybe it sat longer before baking or was stored in the fridge overnight instead of eating right away or baking right away. So many different scenarios there are of changing a recipe. Every time I cook or bake something I change the recipe, sometimes on purpose and sometimes not. πŸ˜‚
How does this apply to you? Sometimes it just takes changing one small habit or one small step in a different direction to make a new and healthier you!

Carnitas tacos last night!! I used Siete almond flour tortillas. If you've introduced cassava and tapioca then you can use those. Otherwise, use lettuce wraps or the naan bread recipe in the book. I used carnitas but any protein will do. Onions, cilantro, tomatoes, pickled banana peppers, hot sauce, and pineapple! πŸ€ͺ With fermented carrots on the side. ❀️

I'm sitting in the Sprouts parking lot in my car stuffing my face with this... It's so good! And I waited too long to eat. 😬. They have a bogo sale going on with some of their condiments. So the inspiration for this bowl came from what I bought last night. This has a quinoa base with chickpeas and green onions and sweet potatoes. The dressing is olive oil, red wine vinegar, lemon juice, a little honey (which you can skip), seasoning salt, and turmeric. On top, there's pulled pork (any protein will do), hummus, cucumbers, sauerkraut, pickled spicy onions, pickled banana peppers, olives, avocado and tomatoes. You can leave out what you can't eat and add other things.
This is my last day at Sprouts 😭. I'm trying something else new. I'll tell you about it later! I'll miss working here though. It's been alot of fun!
