This was my lunch today and it will be my dinner too! I wanted to use up some pretty mushrooms I bought the other day so I created a beautiful stir fry. I wanted leftovers for dinner since I'm working tonight. I sauteed onions, mushrooms, carrots, cabbage, cilantro, arugula in olive oil and greek seasoning with salt. When it was done I sprinkled balsamic vinegar all over it. I love doing that! I heated up leftover quinoa and flank steak, chopped up some vibrant yellow beets and threw it all together in a bowl with avocado, salsa, and Kite Hill ricotta. It was Amazing! ๐ฅฐ
