This was my lunch today and it will be my dinner too! I wanted to use up some pretty mushrooms I bought the other day so I created a beautiful stir fry. I wanted leftovers for dinner since I'm working tonight. I sauteed onions, mushrooms, carrots, cabbage, cilantro, arugula in olive oil and greek seasoning with salt. When it was done I sprinkled balsamic vinegar all over it. I love doing that! I heated up leftover quinoa and flank steak, chopped up some vibrant yellow beets and threw it all together in a bowl with avocado, salsa, and Kite Hill ricotta. It was Amazing! ๐Ÿฅฐ

I found a new "noodle" for you! It's made from Hearts of Palm and I found it at Sprouts!! ๐ŸŒฑ๐ŸŒฑ๐ŸŒฑ It's interesting and doesn't really have a significant taste. It's a veggie! I mixed it with some leftovers and it was pretty good.

I'm introducing more foods into my diet!! Shrimp again. Since the first intro didn't go well I'm trying it again. Grilled shrimp this time. I realized that I hadn't had grilled shrimp in a long time. They were great! Cajun seasoned shrimp on top of sauteed veggies (cabbage, carrots, arugula, red onions, mushrooms), sweet potato and beets on the side.
Did you know beets help with regularity. Yep! May cause a little gas too but will help move things along. Also, beets help with nitric oxide production which helps support good blood flow and oxygen in your muscles.
I'm sitting under a dark cloud right now. I hope we get some rain today!

My lunch yesterday was a pretty good combination of leftovers from dinner the night before. It was cauliflower rice that I mixed up with chopped mushrooms and sauteed. I added instant pot shredded beef, cubed yellow beets, avocado and pumpkin seeds. The beef and the broth it was in made a sauce so I didn't add any extra sauce to it. I did drizzle it with olive oil though.

Good morning! Happy Sunday! If you are eating eggs this is a good one! I actually had this for my bedtime snack the other night, I was so hungry! But I'm also eating it for breakfast today. It includes a PACHA English muffin (toasted good), with Green Gotham's vegan pesto and Kite Hill ricotta spread on them, two scrambled eggs (made into an omelet) with turkey bacon bits and salt in them, topped with leftover guacamole and green chili sauce made yesterday. It is really good! ๐Ÿ’š๐Ÿฅ‘๐Ÿ’š๐Ÿฅ‘๐Ÿ˜˜ I'm full and I'm still eating it. It's a lot of food, you may just want to do one egg.
I am declaring it self-care day! Do something you love today!

This was my dinner last night. It was so good! I felt so full after and I couldn't even eat it all. ๐Ÿ˜† I found this rainbow rotini at Whole Foods in SLC. It was really good with balsamic vinegar and olive oil. I topped it with sauteed mushrooms and onions. My husband made flank steak, air fried spicy cauliflower, and grilled shish*to peppers and I threw in beets and cherry tomatoes. I introduced tomatoes last week.
Happy 18th Birthday to our oldest today!!! ๐Ÿฅณ๐Ÿ˜ญ๐Ÿ˜ƒ
I'm thankful that he's currently still in the nest and hasn't flown out yet. ๐Ÿฉต
Being a Mom with teens is so different than being a Mom with littles. It's unnervingly quiet... At least that's my experience.

Last night we ate cauliflower rice bowls with birria smoked brisket, eggplant dip, sauteed veggies, bell peppers, kimchi, and Kite Hill Ricotta.
My husband's bowl had avocado and feta in it.
I put the eggplant dip on the bottom and then covered it with all the toppings. The veggies I sauteed were cauliflower, chard, cabbage, and green onions. This was pretty easy because the meat was already made. It was great for lunch today, too!๐Ÿ˜

Ok! I tried the PACHA english muffins that you can use as a bun. I made an egg sandwich and a burger ( I put an egg in that too) out of them. They weren't bad! A little dry and thin but I think with enough condiments they are better than a lettuce wrap. At least less messy!!๐Ÿ˜†

Doesn't this Coho salmon look Amazing?! The fat that is coming out of it is your sign that it's almost done and it's so good for you! โค๏ธโค๏ธ Cooking fish is an art. It's got a fine line between not quite done and overcooked! I love Coho more than Sockeye because it's much milder and it's thicker so it tends to be more moist and tender. This is the season for Coho. Sometimes Costco has it but your grocery store should, too. I got this at Harmon's and I should probably go get more. I layered the top of this salmon with lemon juice, Korean chili flakes, salt & pepper, seaweed, sesame seeds, olive oil. I think that's it. It was so good. I had the leftovers for lunch today. Sauteed veggies on the side. You know what else is easy to overcook? Zucchini! Yes! I hate it when it's mushy. So I kept a close eye on it this time. It's so much better when it's a little crunchy still.

I was super excited about my lunch today. It was so colorful and looked so great! I'm in the process of introducing shrimp and so yesterday's lunch and today's lunch included shrimp. However, it's been an epic test fail!!!๐Ÿ˜ญ๐Ÿ˜‚ I thought it would be really good to put the shrimp in this pineapple salsa that I bought at Harmon's. Sounds good, right?! Well...the shrimp sat in it all morning until my lunch time. Pineapple has digestive enzymes in it and so it digested my shrimp!!๐Ÿ˜‚ It didn't look different but it tasted horrible. The texture was mushy and gross! I couldn't eat it. ๐Ÿ™„
Yesterday's lunch was a slaw salad with sunflower butter sauce. I ate the shrimp and it was fine but I also ate a bunch of cabbage. Which made me so gassy and bloated. So it wasn't a good choice to see if the shrimp affected me because of the negative symptoms that the raw cabbage had. ๐Ÿ˜”๐Ÿค” So learn from these mistakes... Introduce food as simply as possible with other foods that you are ok with. Cooked cabbage might have been ok but raw cabbage not so much.

Dinner was tacos! We used Egg life tortillas. For me it was leftover ground turkey with coconut aminos, green onions, kimchi, Kite Hill Ricotta, and hot sauce with a side of sauteed veggies. My husband's tacos were pulled pork with barbecue sauce, kimchi, green onions, and feta.
A great way to use leftovers!
