Energizing Sweet Potato and Oat Breakfast Cookies

Ingredients:
- 1 cup mashed sweet potato
- 1½ cups rolled oats
- ½ cup almond flour
- ¼ cup maple syrup
- 2 tablespoons almond butter
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon vanilla extract
- ¼ cup raisins or chocolate chips (optional)

Directions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix mashed sweet potato, almond butter, maple syrup, and vanilla extract until smooth.
3. Add rolled oats, almond flour, cinnamon, nutmeg, and raisins or chocolate chips if using. Mix until combined.
4. Scoop tablespoon-sized portions onto the baking sheet and flatten slightly with the back of a spoon.
5. Bake for 12-15 minutes until set. Cool on a wire rack before serving.
