One of the best ways you can remain in control of your diet during any holiday is by eating before you go to an event. With the Keto Diet, to maintain ketosis (where your liver is converting stored fat into ketones for energy), you need to be sure to eat a low-carb diet. Guests are encouraged to overindulge at many holiday events throughout the year, and the treats and foods offered usually feature lots of sugar and carbs, from cakes and starchy vegetables to drinks with too much sugar in them. Unfortunately, for many people, holiday eating extends to the rest of the year and bad eating habits perpetuated long after the holiday is over.

16 whole pecans
2 tbsp coconut oil

Instructions:

2. Place pecan into each muffin cup.
3. Melt chocolate chips in the microwave, stirring every 20 seconds until melted.

Chicken Garam Masala
Serving Size: 4

Ingredients
1 lb chicken breast, boneless and skinless
1/2 red bell pepper, chopped
5 tbsp butter
1 1/2 cup coconut cream
1 1/2 tsp turmeric, ground
1 tsp cardamom, ground
1 tsp ginger, ground
1 1/2 tsp coriander seeds, ground
1/2 tsp nutmeg, ground
1 tsp cumin, ground
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions
1. In a medium bowl, mix together turmeric, cardamom, ginger, coriander seeds, nutmeg and cumin.
2. Place a nonstick pan over medium heat and melt butter.
3. Rise chicken and pat dry with a paper towel.
4.. Cut chicken into smaller pieces and add it to heated pan.
5. Sprinkle half the amount of "garam masala spice mixture".
6. Cook for 15 minutes or until chicken is no longer pink inside, stirring occasionally.
7. When done, remove from heat and set aside.
8. Preheat oven to 350F.
9. In a medium sized bowl, combine chopped red bell pepper, coconut cream and the remaining garam masala spice mixture.
10. Mix well and transfer to a baking dish.
11. Add cooked meat and coat well with coconut cream mixture.
12. Bake in the oven for 20 minutes or until lightly golden brown on the top.

Cheese Pie with Mushrooms

Ingredients:

Pie Crust
1 cup almond flour
1/4 cup flaxseed, ground
1/3 cup coconut flour
1 tbsp psyllium husk
1 tsp baking powder
1/2 tsp salt
1 tbsp olive oil
1 egg
1/4 cup water, cold
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Filling
10 oz mushrooms, chopped
4 eggs
7 oz parmesan cheese
salt and pepper to taste
oil cooking spray
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Crust
1. In a bowl, mix together almond flour, flaxseeds, coconut flour, psyllium husk, baking powder and salt.
2. Pour oil and water to bowl.
3. Using a hand mixer, mix until fully incorporated.
4. Mix in egg and continue to beat until a slightly sticky dough has been formed.
5. Spray a small baking pan with oil.
6. Press dough into prepared pan and refrigerate for 30 minutes.

Filling
7. Place a pan over medium heat and spray with cooking oil.
8. Add sliced mushrooms and cook for 15 minutes or until most of the liquid is evaporated, stirring occasionally.
9. Remove mushrooms from heat and transfer to a bowl.
10. Add parmesan cheese, heavy cream and eggs.
11. Season with salt and pepper to taste.
12. Pour the mixture over pie crust and bake in the oven for 30 minutes at 350F.
13. Cool for 15 minutes before serving.
14. Enjoy!
