The summer has been busy and it has been a while since I have posted but I wanted to share with you my (and Luke's) favorite recipe for carrot cake. We celebrated Luke's 17th birthday this week and he requests this recipe every year (along with Tiramisu made by Carly, because you of course need two desserts for your birthday!) πŸ₯³

I’ve shared the recipe in stories or you can head over to my private FB group for the downloadable PDF. Enjoy!

β˜€οΈ5 Things You Need to Know About Vitamin D β˜€οΈ

#1: The best source is sunlight but you need to expose as much of your body as possible for at least 30 minutes to generate enough Vitamin D to last you for the day. You can make up to 10,000-25000 IU per day when safely exposing your skin without burning.

#2: Getting a simple Vitamin D blood test either through your primary care or through a home test, is the best way to determine the right amount of supplementation you will need. And if you are supplementing, the Vitamin D is in the form of D3, This is the most bioavailable (most absorbable) form.

#3: Vitamin D should be coupled with K2. Vitamin K2 helps to regulate calcium in the body in conjunction with Vitamin D. Keeping calcium in balance is very important for healthy tissues and reduces the risks of calcium deposits in organs, blood vessels and producing kidney stones. It is also difficult to get to toxic levels (>50,000 IU) because of the body’s ability to degrade excess Vit D with the help of K2.

#4: It is also necessary to take Vitamin D with Magnesium. Mag makes it more absorbable and activates Vitamin D 3 once it gets into your cells.

#5: And speaking of cells…Vitamin D receptors are on every major organ and in multiple tissues of the body so therefore a deficiency can have profound effects on any system and any cell,

Food for Thought:
The best food sources of Vitamin D are oily, wild fish varieties like salmon, tuna, trout and sardines. Oysters and shrimp also contain a good amount of D. However, wild mushrooms are the only plant source that have high Vitamin D levels - close to 2000 IU in about 4 oz

Understanding the need for Vitamin D is important but eating enough fish daily to maintain D levels is difficult therefore, supplementation may be necessary especially during the long New England winters.

THE HEALTH BENEFITS OF DATES

Why dates, you ask? Abby and I were talking about pregnancy because she showed me a video on dolphin assisted birth. Don’t ask - google it on your own time. No, Abby is not with child! Then Abby asked about raspberry leaf tea relieving menstrual cramps which lead to dates and pregnancy!!! See the connection??? Keep reading, I will explain…

Dates should be considered a superfood because they are. Quite honestly I used to avoid them because of being told that they were very high in sugar…which they are, but they are of a low glycemic index.

That’s a whole other post but in a nutshell, it means they do not break down into glucose quickly. They have good fiber that slows the digestion of the date.

Benefits of dates: mx of action tannins bind to oxytocin receptors that stimulate uterine muscle

Easier and reduced labor time: due to the actions of tannins in the date, they stimulate uterine contractions in a similar way as oxytocin (a hormone in labor responsible for contractions). Dates may also stimulate cervical dilation and have been shown to decrease labor by as much 4 hours. I wish I knew this when I had Carly and Luke.

Dosage - 4 dates per day or 100 g given at 37 weeks gestation is the recommended dose for these favorable responses.

Other great benefits of eating dates include:
1. Improve brain function by reducing inflammation and plaquing
2. Improve cardiovascular health because dates reduce LDL (β€œbad” cholesterol) and triglycerides
3. Improve bone health because the are high in minerals necessary for strong bones

Instead of an apple a day keeps the doctor away, maybe it should be… 4 dates per day and the baby is on it’s way

Try stuffing dates with your favorite nut (like the picture) for a quick and nutritious snack.

Today is my Dad's birthday.

As most of you know my dad passed away on April 4, 2021. Today he would have been 92. He was an amazing man and left in me such a legacy it would take years to explain all he taught me. However, I would like to share a snippet of how he influenced the doctor and person I am today.

My dad was the first person who really introduced me to chiropractic care, nutrition and supplementation. He took me to his chiropractor, Dr. Cohen, when I injured my knee in track. Dad helped me balance my teenage complexion with bioflavonoid supplementation. He’d even give our dogs brewer’s yeast and garlic to fight ticks and fleas.

I remember him as a mountain of a man - strong, resilient and stubborn!! He was afterall an ironworker, (part of the Steel Crew that built the World Trade Centers). When he’d come home, he would trade in his hard hat and steel tipped boots for his T-shirt, shovel and time outside with our dogs and dirt. He’d work the earth to prepare the soil for the garden that would help feed our family of 9.

He was an avid reader and would devour book after book on nutrition, vitamins and minerals. He understood that sometimes we needed more than what our food could provide.

So you see, he planted in me the thirst for knowledge, the joy of a dog(s), the satisfaction of seeing something grow and then nourish, and the commitment to health. I share a piece of me and therefore my dad with you, every time I care for you in the office, write these posts and, as I try, to display through my life.

Happy Birthday, Dad.
