𝐑𝐚𝐢𝐧𝐛𝐨𝐰 𝐜𝐡𝐢𝐚 𝐩𝐮𝐝𝐝𝐢𝐧𝐠 𝐩𝐚𝐫𝐟𝐚𝐢𝐭𝐬

These beautiful chia pudding parfaits are chockfull of healthy ingredients! Each color is dyed naturally using fresh fruits and vegetables. Free of dairy, gluten, grains, and refined sugar!

Recipe type: snack, gluten-free, vegan

Serves: 4-6 servings

Ingredients

For each color:

½ cup dairy-free milk (I used almond and coconut milks, but any milk will do)

fruit blend (see color options below)

sweetener of choice (amount will depend on how sweet your fruit is) 1–3 teaspoons of maple syrup, coconut nectar, honey, or a couple of dates. Use more or less to taste.

3 tablespoons chia seeds per recipe/color (use 4 tablespoons chia seeds if your mixture blended measures over 1 cup)

splash of vanilla, optional

extra cut up fresh fruit, optional, for topping

Plus ONE of the fruits/veggie blends below, separate recipe per color:

Yellow— ¼ cup ripe mango + ¼ cup pineapple (can substitute extra mango or ½ banana for pineapple)

Orange— ⅓ cup ripe mango + a few strawberries + 1 small cube of a peeled beet

Red— ⅓ cup strawberries + a few raspberries + 1 small cube of a peeled beet

Purple— ⅓ cup blueberries and/or blackberries plus a few raspberries

Blue— ½ cup blueberries and/or blackberries

Green— ½ small banana, 1 kiwi (peeled), small handful baby spinach

Instructions

Each color will need to be blended separately. You can give a quick rinse to the blender in between each color, but if you start with the lightest color, it may not be necessary every time.

Place your milk and fruit into the blender and blend, but DON'T add chia seeds just yet. Stop and sweeten to taste. Continue to blend until smooth.

Pour colored milk mixture into a container and whisk in chia seeds and optional vanilla. Cover and refrigerate until pudding has thickened. If possible, mix it again later to break up any chia clumps.

Instructions

Place the berries, banana and coconut milk in the blender and blend until a thick and smooth mixture forms. You may need to add a bit more of the milk to thin to desired consistency.

Taste and add sweetener or honey if desired.

Divide the smoothie evenly between two bowls and top with fresh berries, shredded coconut, almonds, chia seeds or any other healthy toppings as desired. Serve immediately.

Perfect Smoothie Bowls

Ingredients

4-5 frozen bananas 1⁄2 red dragon fruit 

 

Options for Toppings

White and red dragon fruit Yellow plum
White currants
Grapes

Quinoa puffs Paradise pears
Red dragon fruit Passionfruit
Edible flowers (I used corn flowers and violas) 

 

Directions

Blitz the two ingredients in a food processor until smooth and creamy. Transfer into a bowl and decorate with the fruit. I tend to cut my dragon fruit into shapes with a cookie cutter, or use a melon baller to make it into balls. Add the quinoa puffs and edible flowers last, then enjoy!

Berry Layered Chia Pudding. Chia seeds transform into a delicious pudding-like texture when soaked in liquid. Take this superfood to the next level by layering it with delicious berry smoothie!

INGREDIENTS

Chia Pudding

4 tablespoons Chia Seeds

1 cup (235 ml) Plant milk of your choice

1 teaspoon Maple Syrup

1/4 teaspoon Vanilla Extract

Berry Layer

1 Frozen Banana

1/2 cup Frozen Strawberries

1/2 cup Frozen Blueberries

1/2 - 1 cup Water

INSTRUCTIONS

Place all the ingredients for the Chia pudding in a bowl and stir to combine. Let it sit for 15-20 minutes. Stir it a couple of times during the waiting to make sure the seeds are evenly distributed.

Blend everything for the berry layer together until completely smooth.

Layer everything in a glass of your choice and enjoy!

Breakfast baked sweet potatoes stuffed with creamy almond butter, banana slices, chia seeds & a sprinkle of cinnamon! An easy to make paleo breakfast that tastes like dessert!

Ingredients

2 medium DOLE sweet potatoes, washed

2 tablespoons natural almond butter

1 DOLE banana, sliced

2 teaspoons chia seeds

Cinnamon

Sea salt

Instructions

Preheat oven to 375 degrees F. Line a medium baking sheet with parchment paper or foil.

Use a fork to poke several holes in the sweet potatoes, then place on prepared baking sheet and roast sweet potatoes for 45 minutes-1 hour or until fork tender. Remove from oven and allow to cool for 5-10 minutes.

Once ready to eat, split the warm sweet potatoes open with a knife and sprinkle with a tiny bit of sea salt. Next drizzle 1 tablespoon of almond butter, 1 teaspoon of chia along with banana slices and finally a sprinkle of cinnamon in each sweet potato. Serve immediately.

Recipe Notes

For more protein (and if you aren't paleo/vegan): Add 1/2 cup of greek yogurt on top of the potatoes!

There are never enough ways to eat the rainbow, so grab your spoon.

Ingredients

Custard Pudding

300ml of milk

300ml cream

6 egg yolks

100g sugar

2 tbsp flour

2 tbsp cornstarch

400g butter (cut into cubes and cold)

1 tsp vanilla bean paste or extract

1 drop yellow food gel

1 drop green food gel

1 drop blue food gel

1 drop purple food gel

1 drop red food gel

1 drop orange food gel

chocolate sauce

100g fruity pebbles

Whipped Cream

300ml whipping cream

1 tsp vanilla extract
1Tsp Black Chia Seeds (Optional)

Instructions

In a large microwave safe mixing bowl, add sugar, flour and corn starch. Mix until well combined. Add egg yolks and mix. Add cream and milk and whisk until well combined.

Microwave for 30 seconds at a time, mixing each time until thickened. It will take around 10-15 minutes. Alternatively, you can do this in a medium sized sauce pan on a low heat.

Cover bowl with plastic wrap and chill for 3 hours.

Once chilled separate into 6 separate bowls and colour using food gels. Mix until well combined.

Drizzle 3 serving cups with chocolate sauce. Chill. Dip the lip of each cup into chocolate and dip into fruity pebbles. Allow to chill while you whip the cream

Whipped cream

Add cream to a large mixing bowl along with vanilla and whip using a stand mixer to stiff peaks.

Add each coloured custard to a separate piping bag and start off by squeezing purple, followed by blue, green, yellow, orange and red.

Fit the end of a piping bag with a 1M piping tip and frost puddings with a swirl of cream on top. Finish with a paper straw.

Have you ever tried chia drinks?

My first introduction to chia seed based drinks was last autumn when Mike & I were staying with my family in Arizona. We found the Mama Chia drinks at pretty much every store and became quickly obsessed. After trying every available flavour we started trying to make our own at home.

It honestly has the weirdest texture and I love it.

INGREDIENTS

6 cups water (divided)

3 tablespoons chia seeds

2 cups strawberries, stems removed

1 1/2 cups freshly squeezed lemon juice

1/3 cup maple syrup (can use honey if you don't need this to be low fodmap or vegan)

INSTRUCTIONS

Start your base by mixing 2 cups of water with the chia seeds. Stir, and then set aside in the ridge for at least 30 minutes. The chia seeds need to gel up before adding to the rest of the drink.

Add the strawberries and 4 cups of the non chia seed water to blender and blend until the strawberries are completely pureed. Add the lemon juice and the maple and blend once more briefly to mix everything together.

Add the chia water to the lemonade and stir to combine. Taste and add more sweetener if needed.

Transfer the lemonade to a pitcher and serve. The chia seeds may settle over time so make sure you give the lemonade a quick stir before serving if that happens.

Cookie Crust
28 Oreo Cookies 320g, or other cookies with cream filling
1/3 cup vegan butter 80g, melted
Blueberry Blackberry Mousse
8 oz Blackberries & Blueberries 225g
1 cup non-dairy cream cheese 225g, or drained yogurt
1/3 cup sugar 75g
2 tsp vanilla extract
1 cup non-dairy whipping cream 240ml, chilled, or coconut cream
1/4 cup non-dairy milk 60ml
1 tsp 100% agar powder or gelatin powder (if non-vegan)
Instructions
*Note: Please watch the recipe video!
Cookie Crust
Add cookies with cream filling into a blender (or food processor) and crush until finely ground. Transfer crumbs to a medium bowl, add melted butter, and mix until crumbs are evenly moistened. Press the mixture onto the bottom and up the sides of an 9 or 9,5-inch (23/24cm) tart pan or a another pan with removable bottom. Place in the freezer for 15 minutes (or in the fridge for 30 minutes) to firm up while you make the filling.
Blueberry Blackberry Mousse Filling
Add the blackberries and blueberries into a blender and blend until smooth. (Optionally, strain the berry purée through a mesh sieve and discard the seeds. Then put back into the blender.) Add vegan cream cheese, sugar and vanilla and blend until smooth. Set aside.
In a mixing bowl, whip up the cold non-dairy whipping cream using a handheld mixer, until stiff peaks form. Refrigerate until ready to use.
In a small saucepan, stir the agar-agar into the non-dairy milk. Bring to a boil and cook for about 2 minutes or according to the package instructions. Remove from heat and let cool slightly, stirring occasionally. (If using gelatin, you can skip this step. Read recipe notes*).

𝐆𝐫𝐚𝐧𝐨𝐥𝐚 𝐁𝐫𝐞𝐚𝐤𝐟𝐚𝐬𝐭 𝐓𝐚𝐫𝐭𝐬 – 𝐦𝐚𝐤𝐞𝐬 𝟒 -𝟓 𝐬𝐦𝐚𝐥𝐥 𝐭𝐚𝐫𝐭𝐬
1 1/2 cups rolled oats

1/2 cup shredded coconut

2 tbsp chia seeds

1/2 tsp cinnamon

1/4 cup + 1 tbsp coconut oil

1/4 cup honey or maple syrup

Filling

1 cup natural yoghurt or coconut yoghurt ( may need more or less depending on the size of your tarts)

1 tbsp honey, stevia or other sweetener (optional, I didn’t add any sweetener)

1 tsp vanilla

Pre-heat oven to 180 degrees celcius

Combine oats, coconut, chia seeds and cinnamon in a large bowl, set aside

Melt coconut oil and honey in a small saucepan over a low heat

Pour melted oil & honey over dry mixture and stir to coat well

Place spoonfuls of the mixture into greased tart tins, using the spoon to press in as much as possible

Bake for around 15 minutes, checking to ensure they don’t brown too quickly

remove from the oven and working quickly press into the tin using the back of a spoon a second time

Allow to cool completely before removing from the tins

Add spoonfuls of the yoghurt mixture into each tart and top with desired fruits!

500 g Skyr

100 g fresh raspberries

100 g fresh bromine or blueberries

2 tablespoons of honey •Chia seeds

optional: 1 frozen banana (frozen in small pieces)

Topping:

choice of dried superfoods

fresh fruit of your choice

preparation

Mix the Skyr with the fresh raspberries and blackberries (alternatively blueberries) and the honey in a blender. Optionally, a frozen banana, which was previously frozen in small pieces, can also be mixed. The frozen banana makes the bowl even creamier and gives it a delicious icy consistency.

Arrange the berry cream in a bowl and top it with various superfoods, fresh fruits and various nuts.

1/2 cup unsweetened almond milk (or your choice of milk)

DIRECTIONS

Blend all the ingredients and put in your smoothie bowl.

Top the bowl with whatever you like. I chose dragon fruit balls, baby kiwis and heart truffles (made of hazelnut, almonds, cacao & dates and coated with mango & passionfruit mirror glaze (little project coming soon in collaboration with my pastry chef friend)). The flowers are edible camomile but they’re bitter for my taste so I am only using them for decoration

2 cups frozen banana chunks

1 cup water

3 ice cubes cracked with the back of a spoon

10 raw pecans
1 tbl Spoon Chia Seeds

2 tablespoons raw h**p seeds

1 tablespoon heaping spirulina blue green algae

1 tablespoon heaping raw cacao nibs plus more for garnish

1 teaspoon pure vanilla extract

1 pinch sea salt

3-4 drops stevia optional

fruit of choice for rainbow garnish red, blue, and purple berries, nectarines, banana, kiwi, etc.

unsweetened coconut flakes

INSTRUCTIONS



To make kiwi flowers, insert a sharp pairing knife at a 45º angle at ½-inch intervals around the circumference of the kiwi (see images above), inserting knife all the way through to the other side. Once you go all the way around in one direction, make incisions at the opposite 45º angle, as shown in picture above, again inserting knife all the way through. Once it’s completely cut in both directions, simply pull apart.

Place frozen banana, water, ice cubes, pecans, h**p seeds, spirulina, cacao nibs, vanilla, sea salt, and stevia in blender and blend on high until completely smooth. Pour into bowls and garnish with kiwi flowers, berries, nectarine slices, cacao nibs, and coconut flakes.

Chia Pudding
4 tbsp chia seeds
1 cup almond milk
Pinch vanilla powder
Acai Smoothie Layer
1 tbsp acai powder
1 cup fresh strawberries
1 ripe banana
1 tbsp almond butter
2 tsp unsweetened desiccated coconut
3-4 fresh mint leaves
1/4 cup almond milk
*Optional: 2 tsp bee pollen use h**p hearts for the vegan version
Fruit Layer
Fresh mixed berries mashed with a fork to obtain juice and chunks (i used strawberries and blueberries)
To Garnish: fresh fruits bee pollen (*optional), coconut flakes, mint leaves

1.Add the chia seeds, almond milk and vanilla powder into a medium bowl, mix to combine and set aside for 15 minutes, until the seeds absorb all the liquid.
2.Add all the smoothie layer ingredients into a blender and process to obtain a creamy mixture.
3.To assemble the jar add half of the mashed fruits, then a layer of chia puding, top with acai smoothie and garnish with fresh fruits, bee pollen, mint leaves and coconut flakes.
Prfoceed the same with the second jar, then serve or lid the jars and pack to go.

INGREDIENTS

1 2/3 cups (250g) plain flour

175g chilled unsalted butter, chopped

2 tablespoons black chia seeds

4 eggs, plus 1 egg yolk

2 red onions, thinly sliced

1 tablespoon chopped thyme leaves

1 1/2 tablespoons brown sugar

1 tablespoon balsamic vinegar

300ml pure (thin) cream

300g soft goat's cheese

Step 1

Place flour, 125g butter and 1/2 tsp salt in a food processor and process until mixture resembles fine crumbs. Add chia seeds, 1 egg and 1 tbs iced water, and pulse until mixtures comes together in a smooth ball. Shape into a disc, enclose in plastic wrap, then chill for 30 minutes. Melt remaining 50g butter in a frypan over medium-low heat. Add onion and thyme, and cook, stirring occasionally, for 30 minutes or until onion is soft. Add sugar and vinegar, then cook for a further 5 minutes or until onion is caramelised. Set aside to cool.

Step 2

Grease a 26cm loose-bottom tart pan. Roll out pastry on a lightly floured work surface to 3mm thick, then use to line prepared pan. Chill for 15 minu

1 cup Blueberry–Chia Seed Jam

¾ cup coconut water

1 tablespoon fresh lime juice

Pinch of kosher salt

½ cup fresh (or frozen, thawed) blueberries

Special Equipment

Six 4-ounce ice-pop molds
RECIPE PREPARATION

Purée jam, coconut water, lime juice, and salt in a blender until smooth. Add blueberries and pulse just to break up some of the berries. Pour into ice-pop molds, insert sticks, and freeze until solid, at least 3 hours.

Run under hot water for several seconds to unmold.

Layered Parfait with blue chia pudding and plant-based beet jogurt. Decorated with pomegranate jewels and edible flowers. Gluten-free, sugar-free and vegan.

Ingredients

1.25 cup rice milk

2 bags Butterfly Tea Flower Tea

4 tbsp white chia seeds

1.5 cups soy jogurt

1 tsp beet powder

2.5 tbsp erythritol

4 tbsp pomegranate jewels

edible flowers (optional)

Instructions

Bring rice milk to the boil and add butterfly pea flower tea. Leave to stand for 10 minutes.

Remove tea bags, squeezing them slightly.

Allow the tea to cool and add chia seeds and 1 tbsp erythritol. Mix vigorously for 60 seconds. Allow to rest for at least 2 hours, stirring once in a while.

Divide chia pudding into halves and mix one part with one 1.5 tbsp soy jogurt and the other part with 3 tbsp soy jogurt.

Mix remaining soy jogurt with beet powder and 1.5 tbsp erythritol.

Layer chia puddings and beet jogurt in a jar and top with pomegranate jewels and edible flowers.

Notes

Substitute soy yogurt with coconut yogurt if you want to omit soy.

INGREDIENTS

4 roasted red bell peppers

1/3 cup (80 ml) olive oil + more for garnish

1 Tbs maple syrup

1 Tbs balsamic vinegar

1 chili, seeds removed

1–2 cloves garlic

1 cup (130 g) walnuts

salt, pepper

3 Tbs chia seeds for garnish

INSTRUCTIONS

Preheat oven to 390°F (200°C) and prepare a baking sheet with parchment paper.

Roast bell peppers for 45 minutes. Let cool. Remove skin and seeds.

Add the pepper together with all other ingredients (except for the chia) to a blender and process until smooth.

In a small saucepan, slightly toast the chia seeds before sprinkling them on top of the Muhammara.
