This is the perfect soft and chewy cookie

Yield: Makes about 3 dozen

Ingredients

2 1/4 CUPS ORGANIC UNBLEACHED ALL-PURPOSE FLOUR OR SPELT
1/2 TEASPOON BAKING SODA
1 CUP ORGANIC UNSALTED BUTTER, ROOM TEMPERATURE
1/2 CUP ORGANIC CANE SUGAR
1 CUP PACKED ORGANIC LIGHT BROWN SUGAR
1 TEASPOON KOSHER SALT
2 TEASPOONS PURE VANILLA EXTRACT
2 LARGE EGGS
12 OUNCES SEMISWEET CHOCOLATE CHIPS (2 CUPS) ( I LIKE LILLYS BRAND)

Directions

STEP 1Preheat oven to 350°F with racks in the upper and lower third positions. In a small bowl, whisk together flour and baking soda; set aside. In the bowl beat butter and both sugars on medium speed until light and fluffy, about 3 minutes. Add salt, vanilla, and eggs; mix to combine. Gradually add flour mixture, mixing until just combined. Mix in chocolate chips. ( you can use a stand mixture if you prefer)

STEP 2Using a tablespoon measure, drop heaping portions of dough about 2 inches apart on baking sheets lined with parchment paper

STEP 3Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer cookies to a wire rack and let cool completely. Store cookies in an airtight container at room temperature up to 1 week.

Enjoy with a tall glass of cold milk or nice frothy coffee. - I bet these would make really nice ice-cream sandwiches' too

***Kheer - Indian Rice Pudding***

This is the Indian version of rice pudding - I grew up eating this at home and it was also served as desert at special occasions and ceremonies.

It is made on the stove top vs the oven. It is delicious, rich and creamy with the cardamom and almonds giving it a distinctive texture and flavor.

Like most Indian recipes - many families have their own versions - this is mine

Ingredients:

3/4 cup basmati rice (you can also use Arborio rice)

10 cardamom pods

4 cloves

1 cinnamon stick

12oz water

1 can full fat coconut milk

3/4 cup sugar

1/4 cup sultanas

1/3 cup slivered almonds

2 tsp rose water

How to prepare:

Wash rice until water is clear

Soak rice in cold water for at least 30 min

Drain well

Remove seeds from cardamom pods and lightly crush them in a spice grinder or pestle and mortar.

Combine rice and water in a large heavy based pot or saucepan - add cardamom, cinnamon and cloves. Bring to a boil and then reduce heat and cover. Allow rice to simmer - stirring occasionally and keeping an eye on it.

When rice is almost cooked through and water has reduced - add in can of coconut milk and sugar - and allow to simmer on low until desired consistency. If it is too thick add a bit more water. Too runny allow it to simmer and set.

Dry roast the almonds in a dry pan.

When the rice is done - turn off heat and stir in rose water, sultanas and slivered almonds - reserving some for garnish

Serve warm - top with more almonds, sultanas - coconut is nice as well.

Enjoy.

- stir in 1 egg yolk to your bowl of warm pudding

You will find chutneys at most Indian dining tables, each region having their own signature. A chutney is similar to a relish or jam.

They can be sweet, sour, or savory made with fruit, vegetables, or herbs.

What chutneys have in common are fresh ingredients ground together. At one time, a mortar & pestle would have been used to make a chutney, though now most use the convenience of a food processor. Chutneys help balance a dish by adding incredible flavor.

The herbs or spices added to chutneys help aid in digestion and stoke the digestive fire.

This chutney is a perfect addition to kitchari, grain dishes and breakfast porridges.

INGREDIENTS
1 cup raisins
1 cup medjool dates
1 tsp cumin seeds
1 tsp fennel seeds
1/2 tsp coriander, ground
¼ tsp nutmeg, ground
1 tbsp fresh ginger, minced
¼ cup orange juice
¼ tsp salt

METHOD Place the raisins and dates in a bowl, cover them with hot water, allow to sit for 5 minutes to soften, then rinse and strain. For added flavor, dry roast the spices until fragrant. Place all of the ingredients in a food processor and pulse until coarsely ground. Store in a well-sealed jar in the refrigerator for up to a week.

Makes about 1 cup of chutney.

Cacao-Balsamic Glaze

•Cacao (Adaptogen Drinking Chocolate works excellent as it’s perfectly spiced)
•1 Cup good quality balsamic vinegar
•2 tbsp maple sugar
•generous pinch of sea salt

Place vinegar, maple syrup and salt in a heavy bottom sauce pan over medium heat and bring to a gentle simmer and leave to bubble for 5 min- stirring occasionally.

Take off heat and sprinkle in Cacao powder and whisk in - drizzle over roasted root veggies.

Store in the refrigerator for up to a week

Made with quality heirloom cocoa, this blend is deeply restorative as it is flavorful.

A perfect way to add adaptogen herbs to your daily nourishment routine

MAKE YOUR OWN
Ingredients:

1.5 tbsp. Adaptogen Drinking Chocolate(available in our shop) or plain raw cacao and add your own powdered herb extracts and spices.

1 tbsp. melted coconut oil

1.5 tbsp. maple syrup

Course sea salt to finish (optional)

•Measure out all ingredients into a glass bowl
•Combine together - if maple syrup is cold it will seize. Use a double boiler to re-melt the coconut oil
•Dip your desired fruit and place in freezer or use as a topping or place in the center of a fruit platter.
•Finish with course sea salt if desired.

Works well whatever fruit you like, persimmons, figs, berries etc.

Broth is ancestral and rooted in deep slow nourishment.

Many traditional cultures have used broths to treat not only common colds but also gastro intestinal issues, joint pain, depression, hair, skin, nails and bone health.

In our busy lives broth may seem like a hassle to make, too time consuming and tedious (but really its not)

Many focus on muscle meats only in their diets (chicken, steak, fish etc) and throw away the bone, and other connective tissues. These discarded parts produce gelatinous, nutrient filled food containing potent healing protein (collagen/gelatin) and essential minerals.

Why gelatin is so important:
✅Improved digestion
✅Improved sleep
✅Increased insulin sensitivity
✅Increased gastric juices in stomach
✅Healing the gut lining + protecting the stomach from ulcers
✅Improved allergies
✅Improved wound healing
✅Improved liver detoxification
✅Improved hair, skin, hair + nails
✅Helping with arthritis
✅Helping with diabetes
✅Helping inflammation

❗️Gelatin is void of inflammatory amino acid tryptophan. Gelatin also contains very little cysteine, methionine, and histidine.

Many people who are in a hypo-metabolic state consuming a high muscle meat diet only can lead to ❗️inflammatory issues, like poor digestion
❗️achy joints, muscle loss, allergies

💡 A person with a sluggish metabolism would benefit from diet low in muscle meat and high in bone broth and gelatin.

✅Gelatin is also high in glycine – glycine is the simplest of all amino acids. Glycine is used for synthesis of heme, the portion of the blood that carries oxygen.
Glycine
▶️Synthesize creatine, which helps supply energy to the heart and muscle cells.
▶️Synthesize bile slats, purines and nucleic acid which are the building blocks of RNA + DHA
▶️And is needed for detoxification – glycine is one of the amino acids that make up glutathione, one of the key detoxification enzymes.

5-INGREDIENT FLOURLESS BROWNIES

5-Ingredient Flourless Brownies ready to go in the oven in just 5 minutes baking to fudgy, crackly-topped brownie perfection!

1/2 cup unsalted butter
1 cup chocolate chips (semi-sweet or dark)
1/2 cup sugar
3 large eggs
1/4 cup unsweetened cocoa powder / raw cacao or the drinking chocolate Cacao Blends in our shop.

INSTRUCTIONS
Preheat oven to 350°F.

Lightly grease an 8×8-inch baking dish or pan and set aside.

Place the butter and chocolate chips in a large bowl and melt over a double boiler until melted and smooth.

Remove from the heat. Whisk in the sugar then the eggs one at a time until batter is smooth.

Add the cocoa powder and stir until well incorporated.

If you decide to add herbs and powders this is a good time. I like

Spread the batter evenly into the prepared baking dish.

Top with additional chips if you like and course salt.

Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely in pan.

A nourishing spiced elixir on this autumn day:

HEART BEET LATTE
Makes 2 servings

2 cups heated whole milk
1 tsp beet powder or 1/2 cooked small beet
2 tsp raw cacao powder
1/4 tsp cinnamon
ground 1/4 tsp cardamom
ground 1/8 tsp dry ginger
1 pinch of black pepper
1 tbsp cocoa butter
1 tbsp collagen powder or gelatin powder
1 tsp raw honey or more

Place all the ingredients in a highspeed blender, blend until smooth, then pour into a mugs.

Many cultural foods from around the world have an easy to digest rice dish used not only as a staple but as a medicinal dish. From kitchari to Congee.

Congee, Jook and Zhou are all names for rice porridge—determined by the language, region or country of origin.

Made as a staple in over 15 countries in the world it’s origins go way back and is traditionally prepared with rice.

Although other grains, are or can be used typically, one uses broken rice or other various grain sizes, again depending on the different region or country.

Congee is the ultimate comfort food

The humble khichdi has been a staple meal in our home - ever since I could remember.

A mix of lentils and rice, the classic khichdi is a comfort food for many.

Simple, satisfying and scrumptious, a wholesome bowl of khichdi speaks volumes about both health and taste.

Easy to cook and easy to digest, there's nothing we don't like about khichdi.

It is a one-pot meal that is often spruced up with a flavourful desi tadka and dollops of ghee.

However, khichdi is one such dish that need not follow any strict recipe. People in different homes cook it differently, often giving their own spin. Besides experimenting with different types of lentils, grains and veggies, one can also add in choice of spices to make it even more interesting.

From moong dal and arhar dal to oats and sprouts - people make khichdi using every ingredient possible.

Aromatic pan fried potatoes

I par boiled potatoes in well salted water. - when almost cooked through - drain and add to a preheated pan with a high temp fat of your choice - I used tallow.

Add- salt, pepper, bay leaf, cinnamon stick and oregano.

Pan fry until they are browned to your liking.

Add a few dashes of Worcestershire sauce and they are ready to serve.

- goes really nicely with a steak 😉

A wonderful way to use the last of the garden herbs is to make a vinegar.

Gather, prepare by garbling and cleaning.

Pack a jar and cover with vinegar of choice. I like to use apple cider vinegar.

I used- chives, lemon balm, mint, lavender, sage, rosemary, thyme and oregano

You can use anything you like - garlic, ginger and chillies (Also see blog post on Fire Cider)

If using a metal lid - make sure to separate with a piece of parchment or wax paper.

Be sure to shake when you remember - ensuring that herbs are fully submersed in liquid.

Label jar and store in a dark cool cupboard for up to a month

Strain and store in a cool cupboard or refrigerator.

Use herbal vinegars any place that you would use vinegar, including in salad dressings, marinades, sauces, sushi, or pies.

Add a splash to chili or bean soups, use it in your pickling, and pour over meats before roasting. Add it to barbecue sauces, sandwich spreads, and condiment recipes. And even a dash to your simmering both when making bone broth.

Simple dressing :
1 part Dijon mustard
2 parts honey or maple syrup
2-3 parts vinegar
Salt to taste
Whisk and enjoy

Spices- wars were fought over them, kingdoms were lost and new lands were discovered in search of them.

Spices at a time were often more precious than gold.

But before spices were currency, spices were medicines. Turmeric, cloves, cinnamon, coriander, ginger and black peppercorns.

Spices also distinguish cultural cuisine and have deep aromatic roots.
